I’m here and trying to smoothly transition into 2023 after some down time. We’ve been hunkering mostly at home when not working while getting so much rain and storms the last couple of weeks. That’s glorious, we need all the rain. But seeing a bit of wind damage and debris from gusts up to 60 MPH which we’re getting another storm starting tonight and more rain all week. We’ve been taking the opportunity to have more fun cooking at home like having a vegan taco extravaganza last night. And I’ve been trying to get outside for walks when the sun does come out for a bit to admire all the full ponds and lakes.
We had a fun Daiya vegan pizza night Friday while watching The Menu.
There has also been vegan Thai takeout, salads, and a potato sauté using Haven’s Kitchen Coconut Cashew Sauce I found for a great price at Grocery Outlet.
And more Edamame Green Goddess sauce from Haven’s Kitchen with a kicky quinoa veggie dish.
I enjoyed another Grocery Outlet find for a work lunch one day when the weather did not make me want to leave for lunch, Strong Roots Greek Orzo Pasta Bake microwave meal. It had a lot of kick and vibrant veggies.
We have also been getting to Amy’s Drive Thru when the weather permits for vegan burgers, fries, and enchiladas.
We also had a great family birthday party where the vegan options included a large tray of veggie sushi from Mikuni’s, vegan egg rolls, and Korean noodles from Pho Vegan Asian Cuisine.
I am still into comforting turmeric, soy curl, and noodle soup with the chilly wet weather and simple, comforting potato sautés.
More salad, simple kicky rice, and another trip to Amy’s Drive Thru making this a delicious start to the New Year!
We have been trying to live in a healthier, happier place for 2023 with less stress, healthier eating, and making plans to look forward to when it is eventually not raining, haha. Those goals are going well so far, I am embracing using the weather as an excuse for more fun projects at home such as big plans for this year. I hope 2023 is starting off well for you too and this list brings some positivity.

I’m glad you’re staying safe in that crazy weather! The reports have me really worried. Of course this is when I chose to come in for a visit… I just wish it was longer so I could head out your way and try all of those restaurants, and/or load up at Grocery Outlet for old time’s sake! That party platter of sushi is the stuff that dreams are made of.
