I have been not great about documenting eats this week such as the interesting vegan options at a work holiday brunch or a last minute work group lunch to a Mexican restaurant where the veganized veggie enchiladas weren’t bad. And I hosted a vegan dine-out for the Sacramento Vegetarian Society at Pho Vegan Asian Cuisine on Saturday, but only a small percentage of those who RSVP’d showed up do to the crazy winter storm. Oh well, we still had a nice time chatting.
I did finally break out a holiday puzzle that I probably won’t finish in time and Ron and I found a fun new vegan snack to try from Trader Joe’s, Spicy Porkless Plant-Based Snack Rinds. And they have a satisfying spicy kick that lingers!
And I tried a new Amy’s Organic frozen meal for an easy work lunch, Moroccan Inspired Vegetable Tagine that was satisfyingly flavorful and filling for a quick lunch.
We also stepped out for vegan Thai Friday to celebrate the end of a crazy week and I made comforting soy curl noodle soup for dinner Saturday.
There has also been salads, more noodle veggie soups, and simple steamed acorn squash with tofu sauté.
Kicky Indian lentils with added veggies for another simple meal, the hearty Chana Wrap from Zest Kitchen, and a lazy chickpea and quinoa sauté with spinach that made simple lunch leftovers.
It’s an interesting time of year to try and eat healthy with so many celebrations and rich eating opportunities. I am trying at home and trying to motivate myself for the following work week. Hopefully some happy cheer can be found in this week’s list.

Haha, I am not making a lot of progress on that one! I used to be better at them, but a little rusty.

That’s crazy your had low turnout because of a storm….snow? I can’t imagine! I think my baby wants to attend, all he will eat and I mean it is…winter squash. So I bought 20 at the local farmers market, LOL! And that puzzle….good luck!

It was not snowing, but lots of rain and strong wind which we do not get a lot here.
