We’re wrapping up a long holiday weekend here and I’m thankful to get Veteran’s Day as a holiday now, it was a much needed relax to tackle home projects and recover from an annoying cold. Also enjoyed great eats. If you’re near a Whole Foods, I highly recommend stopping in for this Limited Edition Vegan Smoked Gouda from Miyoko’s Creamery.
The smoky flavor is intensely delicious and possibly the best smoked cheese I’ve had. A worthy splurge for holiday celebrations.
I didn’t make it out for lunch much this week between being busy and rain and tried to be good otherwise with hearty kale meal salads, sweet potato turmeric sautés, and simple protein pasta dinners with leftovers for work lunches.
And a savory buffalo soy curl and cauliflower stir fry and simple tofu tahini tamari stir fry using up fresh collard greens.
More savory chickpea and sweet potato sauté, a childish dinner of steamed spaghetti squash with Beyond Tenders and vegan bleu cheese, and another hearty meal salad to use up fresh ingredients that made a few servings.
We did get to Amy’s Drive Thru for lunch one day for where I had another childish combo of vegan broccoli man n’ cheese with sweet potato fries that was delicious. And I blame the cold for comfort cravings, lol.
Now preparing myself to get back at it tomorrow for a busy week while being optimistic about it. Hopefully a great week ahead for you and let’s start with the list of good vegan news.
