Still coming to terms with Thanksgiving being less than a week away. We’ll be having a casual, local family gathering that I am looking forward to. But it was a busy week at work with some OT and lack of sleep, so I have been treating myself to eating lunch out perhaps a bit too much. I met Ron at Zest Kitchen one day for Chipotle Tacos and a new GT’s Alive Ancient Mushroom Elixir Root Beer that was delicious.
Also enjoyed Revive Original Cola with the Grilled Veggie Quesadilla another day, and the Chipotle Burrito, lots of great eats from Zest Kitchen this week. I also met my mom at Pho Vegan Asian Cuisine for the hearty and warming vegan Wonton Noodle Soup.
Another delicious comfort eat was Truly Indian Organic Kashmir Potatoes heat and eat pouch I found at Grocery Outlet. I added corn and fresh spinach to make it a heartier meal. But it was nicely delicious, kicky, and warming.
It’s been an odd week for eats with being busy trying to eat healthier, but dealing with tired cravings. There was simple steamed spaghetti squash with a turmeric tofu and cauliflower stir fry which made me a bit sad that I was not able to share the spaghetti squash with Miko because it was one of his favorite foods.
There was also protein lentil and beet pasta with simple marina sauce and shredded vegan parmesan. And a very childish meal of roasted acorn squash and animal shaped Impossible vegan nuggets, lol. But they were a cheap Grocery Outlet find and delicious.
Also kale meal salad with tangy sauerkraut and a simple tempeh stir fry with Brussels sprouts.
And back at Sunday, but it will be a short week with Thanksgiving and hopefully a relaxing long weekend. More great food and family, we scored the Trader Joe’s vegan roast this year which seems to be the first to sell out, so looking forward to it with vegan green bean casserole and gravy. But first a few days of work and hopefully a happy start to the short week with this list.
