This week flew by and it’s almost October, Sacramento Vegan Chef Challenge month! And a good month to consider going back to the gym, haha. I got up very early Saturday to be at a nearby ranch at 6am to volunteer for an endurance race a friend was hosting. Basically race participants could choose to run the loop for up to 48 hours and it involved participants setting up camps on the site, crazy! I don’t think I will ever run an endurance race like that, but it was great to see so many determined runners taking that on, and see the sun rise in such a pretty setting.
I helped with the aid station, parking, and food prep while visiting with friendly barn cats.
I was surprised at the amount of older runners and power walkers showing up and it appearing to be just as much a fun camping social weekend as much of an endurance race and a manageable size compared to larger races.
I have also been enjoying more work lunches at local restaurants with my new job including the jazzed up Poke Bowl again from Zest Kitchen and Mock Chicken from Pho Vegan Asian Cuisine.
Also Vegan Black Bean Enchiladas with Sweet Potato Fries from Amy’s Drive Thru.
Winter squash season is here and I found this interesting Korean Style M’Shroom Shreds from Wicked Kitchen on sale at Sprouts Farmers Market making a fun add to a salad served with spaghetti squash.
There has also been huge salads, soy curl broccoli sautés, and Trader Joe’s vegan pizza with added Miyoko’s Liquid Vegan Mozz.
I am still getting zucchini to use up from our garden in simple stir fries while I also enjoyed a kabocha squash sauté with a turmeric tomato sauce taking it to the next level with a little Miyoko’s Liquid Vegan Mozz simmered into it.
And here we are back at the start of another work week and hopefully a great one for everyone. More work projects and learning at my new job here and enjoying the transition to fall which needs to come faster since it was in the 90s today, haha. Hopefully the list is a great start for you.

Oh my goodness, I’m at at 6 but surely not to run! I have to feed the cat and braid my daughter’s hair before her bus comes at 7. Oh well! Those sweet potato fries look like the best I’ve ever seen. I’ve been craving those lately and there’s no great place to go for them here unless you make them yourself. Bleh.

I’m glad September is flying by, too. So much to look forward to in October, and hopefully cooler weather, too! It’s also the month of the World VegFest in SF; and chance I might see you there? I’m coming back to visit and present!
