Great Eats & Positive Outlook for the List

Here we are at Sunday again, wow. It’s been a good and interesting week, I got a run in one evening taking in the views since it was actually cool enough after work. And Miko has been doing okay, coughing more this week. But he had a vet appointment Friday with X-rays confirming it’s not from fluids building up with his heart condition, but from his heart putting more pressure on this trachea. Still not great and I don’t think the heat is helping, but good to know his medications are working still.

Lots of interesting eats including a vegan burrito bowl from Chipotle, tofu stir fry and breaded zucchini fries Ron whipped up to deal with all the zucchini coming from the garden currently. Also more salad and a blend of lentil pasta with zucchini noodles in marinara sauce.

I made and interesting creamy salad dressing blending a spoonful of Wicked Kitchen’s Pink Beetroot Pesto Sauce with hemp seeds, carrot, and garlic that came out great.

I grabbed bagels for breakfast this morning from Bagel & Bean to try their Vegan Chef Challenge options and was pleasantly surprised with the avocado spread for and strong garlic flavors for the Avocado Toast bagel and veggie loaded Veg Out bagel.

There was also vegan Thai takeout and a delicious lentil rice dish I threw together using Saffron Road’s Bombay Lentils one night.

And I met my sister at Veg Café for the massive veggie loaded Breakfast Burrito, Savory Breakfast Crepe, and Grilled Peach and Ricotta Flatbread.

It was so filling we had to go for a walk after, but had a nice time chatting and going over paperwork for my new job. But the weekend flew by too fast as I head into my last week with my current company which still feels a bit surreal after over 15 years. But I am excited and hopeful about the future. And hope this list helps you be excited about the week ahead.

    Oh! I just grabbed that beet pesto from Sprouts too because it was on mega sale. I LOVE it and wish there was more. I think they discounted it because they’re no longer stocking it now.
