Yes, we both had Covid-19 and even vaxxed and boosted, it was intense and I am still getting over it. It’s been a weird and rough 2 weeks. Ron was out on a work trip the week before last, came home from the airport Friday afternoon not feeling great and took a home Covid-19 test that was positive. I tested positive a few days later when I woke up with fever, aches, and massive headache. I am feeling mostly better now with lingering symptoms of a cough, congestion, tired, and airways still inflamed. Days of fever, head pain, light-headedness, coughing, and other odd symptoms and still waiting to wake up feeling back to my old self and normal appetite.
It’s odd because I have been exposed to it before when multiple people I work with in the office months ago got it and I never had symptoms or tested positive and we were exposed to people who got sick over the holidays multiple times and never got it. I guess the 7 month old booster has worn off and/or we were exposed to more of the virus maybe? If you fly anywhere, consider wearing a mask designed to protect yourself!
Miko has been a sweet buddy keeping me company while either working from home or useless on the couch.
There has also been vegan Thai takeout.
My appetite has been just odd, things have not been tasting great and I have not been able to eat much without feeling nauseated. I have been trying to eat healthy, but it’s been tough with off cravings. I made a good quinoa soup using zucchini and potatoes from our garden.
Ron made great beans and rice one night and I whipped up a huge salad using a cucumber from our garden with a kicky, blended miso dressing.
There have also been simple soy curl stir fries using more zucchini from our garden.
And more salad and zucchini tofu stir fry, lol. I was thankful to have Pacific Foods Oat Milk Vegan Cumin Carrot Soup in our pantry that was tasty by itself, but also good used as a simmer sauce for a vegan sausage potato sauté and simple veggie stir fry.
More salad, lol, and roasted garden zucchini with a creamy hemp dill sauce I whipped up in the Vitamix.
I found these interesting frozen vegan mushroom “steaks” at Grocery Outlet by The No Meat Company and Ron had fun getting creative with them topping with sautéed onions and serving with steak fries.
I’ve been having my own odd junk food cravings and indulged on Gardein Ultimate Plant-Based Chick’n Nuggets with roasted cauliflower last night for a total comfort food.
The nuggets were great in texture and flavor and Ron and Miko were happy to help me finish them because my eyes were larger than my stomach!
Hopefully things continue to get better this week and I can return to the office soon, I am very ready to be over Covid-19 as I discover more annoying little symptoms pop-up and wonder how long they’ll last. Again, be safe and avoid going through this if possible! And I have some catchup to do for the list.

I’m so sorry you both got sick! It really does sound like everyone will get it at some point now. At least it’s much less deadly with the vaccines. Take it easy and feel better.

I’m sorry to hear that you and your husband are ill with Covid. I can relate, as we recently returned home from a vacation, ill with Covid.
Your healthy meals look better than what I could stomach (at least at first). I was able to eat ramen noodle soup (the cheap noodles). In order to keep it vegan/plant-based, I just used the noodles (discarded the non-vegan flavor packet) with a plant-based “chicken” flavored soup base mixed in water. I added pre-baked tofu. This is the only meal that helped with my cough, congestion, throat mucus, and nausea. As the days went on, I started to add veggies to the soup. After about 1 1/2 weeks, I was able to start eating more regular plan-based meals without feeling nauseated.
It’s nice that you have been able to stay home and spend more quality time with Miko. It sounds like he has been a good, helpful companion.

Thanks and so sorry you got it too. Frustrating that taking any trip now seems to be a guaranteed exposure to it and not a fun way to enjoy a vacation. I hope you’re feeling better.
Thanks on the meals and I can relate to that, it had very strange effect on my appetite and took awhile to get back to normal.

Ugh. I’m sorry you both got COVID! It is SO weird and affects everyone differently. But it’s sure not a joke that adults get it so hard and kids are barely affected. My daughter brought it home from school and my husband and I were so sick for 2 weeks! At the time, I had a 2 month old baby who tested positive. So 4 kids with COVID. My kids had zero symptoms. Again. Weird! Agree on your taste buds. Mine got all strange with COVID, felt like I was pregnant again as everything tasted like metal! Hope you feel better soon and take it easy.

Ugh, so sorry you got it too and how scary with kids! So glad you recovered and thank you, things are getting back to normal here with some residual symptoms hanging around. It is such a strange virus!
