Happy Mother’s Day! It’s a day to celebrate my mom since we don’t have kids, I took her to lunch and set up her new tablet. Miko is hanging in there, more coughing this week which I suspect is related more to his allergies instead of his heart condition after his good vet checkup last weekend. He has been very happy to be lazy snuggling in his beds and slept in this morning. Our backyard grape plant continues to grow out-of-control while more grapes forming while I figure out a pruning training strategy for it.
Friday we stepped out for vegan Thai dishes again at a different local restaurant. It’s been nice getting out more, but I am also leery of the pandemic, cases are creeping up in this area and more happening at the office as we’re attempting to have people return to the office. Who knows!
It’s been another interesting week juggling a busy work schedule, more simple salads and sautés and utilizing leftovers for work lunches. Not exciting, buy simple, cheaper, and healthier.
I treated myself with another fun Grocery Outlet find – Pacific Foods Oat Milk Garden Tomato soup paired with a vegan grilled cheese. Fun splurge and the soup is rich, creamy, and tasty.
More basic stir fries and sautés to keep it simple. And I took my mom to Timmy Ginger’s Sandwich Shop for lunch since she has not been for their tasty vegan options.
It’s been a good weekend and I’m sad it’s over. Hoping it’s a good week for everyone and let’s start it with the list.

We are similar – we don’t have human children – but a furkid! I’m so happy to see Miko’s precious face! I just posted a lengthy update, as well. Looks like Cricket will have to have some semi-major dental surgery in the near future. I wish I lived closer to you – I would help take some grapes off your hands! LOL! I know what you mean about being cautiously optimistic with the pandemic. It seemed – as least for a few weeks – the cases were going down but the state of PA is back up again with 3,000+ per day and I know that isn’t accurate because not all of the home tests are tallying. My sister and niece just got over it about a week ago. My brother in law is still battling it. So far – my parents and myself are the only ones in our immediate family who haven’t gotten it. (knock on wood).

Yes! Sending good vibes for Cricket and you! Me too, lots of great vegan places we could meet at here! Ugh, cases are going up here too and making me uneasy about being in the office with more folks returning.

Your great look AMAZING! And I’m eating lots of plant based salads these days with cashews and avocados for protein. Trying to eliminate salt from my diet but it’s hard! Or at least eat less of it.

Thanks, there are tons of them forming and I need to come up with a plan to train it on a trellis. Salt is tough, so many seemingly simple foods seem to be full of it!
