It’s been a long week at work, we’re grateful for a long weekend and it’s been a productive one so far deep cleaning the house, minimizing, and chilling with this sweet guy. He looked so adorable snuggled in his red blanked gazing at us, but decided to look away as soon as I attempted to get a pic which is a fun game for him. It’s been cool and dry with gorgeous cloudy sunsets here.
More of the usual this week with salads, fabulous beans and rice Ron made with roasted carrot “sausage”, and tofu stir fries.
More simple veggie tofu stir fries and a huge salad with chopped up vegan burger to share with Miko.
But we did a lot of eating out too making it to Pho Vegan Asian Cuisine for lunch, ordering vegan pizzas for takeout from Blaze Pizza, and making another trip to Amy’s Drive Thru before heading into the mall for a fun shopping trip.
Wow, we have so many great vegan dine out options in the area now that it’s hard to choose sometimes and I am grateful for that too. It’s been interesting at work the last couple of weeks with so many out sick and dealing with other challenges. Getting out for a little fun and feeling like the house is under control at least has helped and having another day to relax tomorrow will help too. I hope you’re well and this list helps.
Yes to your beautiful sunsets! We only have one or two vegan dining out options here since I live in the land of chicken wings (yuck)! So I do most cooking at home. Not much splurging on going out to eat here. Although we have lots of nice desert places =)
Hopefully the vegan options keep getting better and cooking at home is awesome too.

Your meals make mine all look so boring! I’m seriously craving Amy’s now… I really hope they’ll expand beyond CA soon . There’s such clear demand nationwide.
