Crazy that it’s December already and it feels like December weather this weekend being overcast, foggy, and cold. Miko is loving the excuse to snuggle in warm comforters fresh from the dryer, take in the fireplace and embrace his many warm blankets.
But he does take breaks from his warm blankets to share meals with us, he loves it when we set aside little plates of plain pasta for him – yes, he is spoiled.
It has felt very festive and wintery this weekend with cold temps and fog. Ron put in a lot of work last weekend clearing leaves from the backyard only to have our pear and apple trees decide to drop a majority of their leaves after. But the colors are gorgeous.
Eats have been interesting this week coming off of a holiday weekend trying to behave while dealing with work stress. There have been big salads, curried tofu stir fries, and a fun vegan mac n’ cheese Ron whipped up with added veggies and Big Mountain Lion’s Mane Mushroom Crumble for a tasty comfort combo.
Also chickpea spaghetti with white bean pasta sauce, spicy Thai dishes, and wonton noodle soup from Pho Vegan Asian Cuisine that hit the spot in the chilly weather.
We initially were planning to go to the newly opened Amy’s Drive Thru, but the crowds were insane! The drive-thru line was so long, getting into the parking lot was not going to happen – which is awesome! The location is perfect near the mall and guarantees it will be super packed. Hopefully we’ll be able to get into it soon, but I’m thrilled to see such a huge demand. Trying to get thrilled about heading into another work week and hoping this list helps you.

I’m so happy to hear that Amy’s is growing and thriving! I still hope they may expand down south one day… I do miss those milkshakes.

It’s hard to imagine it ever getting cold in California! I always think of it being sunny and warm. Here in New York, it’s cold and colder! 26 degrees out. But the snow is pretty. Looks like you are eating well with some yummy but nutritious bites!
