November has always been an interesting month to me, a conflicted month. It should be a great month, the holidays and fun times with friends and family are here and that is great. But there’s also a consistent, underlying anxiety. The stress of getting ready for the holidays and pressure to make them great. With the decorations, music, and so much build up to the holidays and the slump that follows when the excitement is over, the anticipation of that roller coaster I think especially after the roller coaster of the last nearly two years. But I am looking forward to the holidays and loving our fall wintery weather – look at the beautiful fog this week. So pretty and a great excuse to enjoy the fireplace and cozy projects at home.
Miko was not so sure about the chilly fog this morning when we stepped out for a walk, he took in the chilly, wet air, peed on a shrub, then forcibly dragged me back into the house. But we got our long walk in later when the sun was out.
He has been very happy to sit on his podium stairs at our table and enjoy meals with us.
We stepped out for That last night at a good local Thai restaurant for kicky tofu dishes and I made a huge dinner salad for dinner tonight using goodies from a Trader Joe’s shopping trip today.
There has also been savory curry noodle soup with soy curls and veggies, kale salad, simple tempeh stir fry, and kicky chili mac leftovers vegan cheddar shreds – recipe coming soon for that.
I am still using up the Miyoko’s Liquid Vegan Mozz, that’s five pizzas from one container now and counting. I created this fun mini pizza Friday night using a personal gluten free vegan crust, the liquid mozz, and Big Mountain MMM Might Mushroom Bites chopped as a topping.
For healthier, more whole foods based vegan protein alternatives, the mushroom bites have great flavor and good texture after baking on a pizza. They are hearty and savory with a good umami mushroom sausage flavor and the crispy edges made them a winning addition to the pizza.
Sigh, back to work tomorrow. And Thanksgiving is around the corner! I am looking forward to some down time and fun with good company. And wonderful recipe inspiration from the list.

I know what you mean about being conflicted this time of year. It’s the change of weather for me, honestly. I HATE being cold and it hit this past weekend. Mushroom Bites sound interesting! The food looks great – as always!

I definitely feel that duality about November, but I’ve learned to stop setting such high expectations for the month, and for the holidays in general. It’s really just another day; if it happens to be particularly fun/festive/lovely, so much the better.
Also, I’m really glad to hear that the Miyoko’s liquid cheese goes so far! That was my concern based on the price. I’ve heard that it’s finally available in my area so I’ll check it out ASAP.

That’s a great point for the holidays and especially true after 2020, but a bit of an adjustment to that as well.

Yep. Totally agree. Love the holidays but the stress is overwhelming. Dislike the cold though~ doggies just sit by the fire all day and have actually refused to walk. But we added a fence to our backyard and on sunny days they’ll sit outside a little bit.

Yes, the holidays are such a great time, but can be overwhelming to balance everything! Miko to on the cold, he’d much prefer his pile of blankets and fireplace! That’s awesome on the fence!

Maybe it’s because my granddaughter is a year and a half, but I’m so excited for the holidays. She makes everything feel magical.
I can’t wait to try the Miyoko’s liquid Moz. It’s not in our local Whole Foods, yet.

Yes, hopefully you can get her mozz soon, it’s really fun to work with! Someone also used it on creamy pasta that looked amazing.
