What a week it has been, I was glad to get to the weekend and now sad it’s over. I think Miko is too, he’s been enjoying lazy mornings and movie cuddle time.
Last Sunday we headed out for a hike to get in fresh air in the cooler weather and it was wonderful, so invigorating, relaxing, and a good way to combat the Sunday blues.
Then stopped by Timmy Ginger’s Sandwich Shop on the way home for their Sacramento Vegan Chef Challenge offerings – Ron got the Classic Dip and I got the Pizza Sandwich which were both great and huge making two meals for us!
We’ve also been trying to use up older items in the freezer and pantry. Sunday night seemed like the perfect time to use up a Gardein Holiday Roast with the cooling temps, Ron roasted it over chopped veggies for a one-pot meal that also made lots of leftovers for the week.
I have been into veggie noodle soups this week adding warming turmeric, winter squash sautés, and we used up another frozen vegan pizza that has been in the freezer for awhile.
And my sisters and I took my mom to Wild Rooster Bistro for her birthday where they also had great options for the Sacramento Vegan Chef Challenge.
We started with the mushroom ceviche, I got the vegan tamales with salsa verde and mole, both great, and so was the walnut pudding for dessert.
We also enjoyed walking the Fair Oaks area after taking in the many roaming roosters and chickens and cute shops.
It was a great fall weekend with many great eats, I’m a little sad to be back to work tomorrow. But hopeful it will be a good week starting with the list.

You made that roast look SO good! I wasn’t crazy about it last I tried, but that was years ago, granted… This makes me want to give it another shot.
