It keeps inching towards cooler weather here and we’re all for it! Especially being able to take Miko out on more adventures with safer, cooler weather for him. He has been very happy to be a sweet couch potato and embrace the cooler weather for long walks.
Things are still very busy at work and strange with things booming in some areas while struggling for help and inventory to meet demand in other areas making for interesting challenges and long days where I am burned out at the end of the day and keeping things simple for dinner with salads, stir fries, Gardein Skillet Meals that needed to be used up from the freezer, and more salad.
I did get creative last night with lentil spaghetti, hearty bean pasta sauce, and vegan GoVeggie parm for a fun meal. And Miko patiently waited for me to share the little dish of plain spaghetti set aside for him.
We also celebrated the end to another busy week with kicky Thai curry tofu dishes at one of our favorite local Thai places.
And running after work has gotten better with cooler temps and spectacular moon views this week. While Miko was happy to crash on his couch.
Ron celebrated the start of fall by making a huge batch of chili that was delicious and a great vehicle for his homemade hot sauce.
And great for easy leftovers this week! Ugh on the Sunday blues, I am working hard to be optimistic about the work week ahead and hope you’re feeling okay about it too. If not, there’s always the list to start with.

I can’t wait for chili weather to come around here! That looks fantastic. It’s still 92 today, but I might cheat and make a big pot of it anyway. ;)
