Summer Vibes for the List

I am still getting used to California being “open” again, it does not feel right to go into a store without a mask after making that a habit for so long. And maybe that’s a good thing for now with the variants out there. We got a little break from the heat last week where I could actually get out for a run after work and the scenery was gorgeous.

Miko has been such a sweet buddy at home, we’ve been spending a lot of time chilling inside since the heat is really dangerous for him now with his heart condition. I am thankful he seems stable and happy on his medication now, but worry about him and closely monitor his symptoms to adjust medication and get to the vet promptly if needed.

More simple eats – salads, vegan “beef” stir fry, and a simple curry veggie noodle soup that made a lot of leftovers.

We did step out for vegan Thai Friday night which was wonderful after a busy week.

I also tried Daiya Salted Caramel Chip vegan ice cream which was wonderful, much stronger salted caramel flavor than expected. And I got a little creative in the kitchen tonight making a savory dill quinoa and veggie dish with plenty of leftovers for easy work lunches.

And the highlight of my weekend was deal hunting at Grocery Outlet. I know, I need to get out more, lol. But there was plenty of deals and new products to try like Kite Hill Queso and Strong Roots Beetroot & Bean Burgers which Ron likes to air fry for a crispy snack or salad topping.

Jeez, another weekend flew by too fast. Hoping for a great next week for me and you as well. Hope this list helps!
