That is an interesting title, sorry, I am lacking on inspiration today. But Happy Mother’s Day to the mothers out there. Miko is doing okay, we have been focusing on keeping him on track with his medications and a good diet, I have incorporated recommended supplements for canine cardiac health this week feeling it’s worth a try. He has been so cute and sweet cuddling with us and keeping Ron company in his office bed while working from home.

He had a play date today with family dogs for a low-key Mother’s Day celebration with takeout from Pho Vegan Asian Cuisine. While Ron put together new shelves in our dining room to go with the new dining table – we are slowly converting to a light and natural beach them which I love so far.

I have not been great about getting creative in the kitchen this week, I think I still have the blahs with work being busy and everything else going on – lots of simple veggie dishes, a fun taco salad for Cinco De Mayo when Ron sweetly surprised me with grabbing ingredients for a fun themed dinner. And Thai takeout Friday.

More salad, avocado toast this morning, and Tolerant Organic Smokey Peruvian-Style Riced Lentil Pilaf with roasted garlic and rosemary golden beets from our garden.

The pilaf was tasty with good texture and delicious smoky flavor, I will pick that up again. Ugh on another weekend being over and hoping for a good week ahead. I hope it’s a great week for you starting with the list.

    Oh how nifty! I’ve been very impressed with Tolerant pasta in the past (it was the very first gluten-free option I could even stand) and I didn’t know they were making pilaf now. Good for them! I’ll have to try it.
