How are you? It’s been a lazy and productive weekend here, Miko has been loving his toasty office bed in front of a heater on lazy weekend mornings. And I have been taking in spring views in our backyard as trees are starting to bloom rapidly and I am looking forward to spring gardening.
It’s been a tough week fighting the blues a bit. There is so much going on at work, more work hours, and not a lot of options for fun on the weekends and me feeling too burned out to get out early for a hike, etc. I think I need another vacation. At least getting out for runs and taking in nature has helped, lots of active geese and beavers in the neighborhood now.
And our dinner buddy has been entertaining. Miko has discovered he can jump up into his own chair at the dining table where he knows I’ll share food with him.
He is a fan of plain brown rice, sweet potatoes, plain pasta, etc. I am a fan of takeout from Pho Vegan Asian Cuisine and Ron sweetly surprised me with that after a crazy day Friday.
There have also been simple eats this week such as the curry potato sauté, craving curry lately. Also craving creating a more relaxing environment at home and dug out the oil diffuser to try some new wood scented oils to make our house smell like a forest and to mimic forest bathing. It’s nice and soothing, but still need more actual hiking I think!
Lots of simple eats such as a hearty barely dish with kale, tofu stir fries, huge salads, and more simple potato sautés.
And now I am fighting the Sunday blues and trying to motivate myself for a good day tomorrow and hopefully a good week. Sounds good, right? I hope you’re doing okay and have a great week. Let’s start it with this list.

Finally, spring (and daylight savings) is right around the corner. Just hold on a little bit longer! We’ll get through this, and onward to brighter days all around…
