I hope all is going well, we are enjoying a lazy long weekend after another busy week. Miko is a fan of lazy weekends, he is very spoiled with us being home more.
I have been trying to be healthier at home, I need to after the roller coaster of 2020. But also struggling a bit with motivation in the kitchen and ready to get out more … when it’s safe. I am slightly obsessed with Bolthouse Farms Habanero Blue vegan dressing, it’s creamy, tangy, and has just the right amount of kick to bring a big salad to life.
There have been other simple salads and stir fries. And also a comforting custom pizza using Pizza Oggi Plant Based Butternut Squash crust, plenty of vegan mozz, pineapple, and spinach for a fun Friday meal.
Also a soy curl stir fry and Ron has been perfecting making homemade vegan drunken noodles with tofu. I have been making simple noodle soups to use up older food in the panty and have leftovers for simple lunches.
I tried Tolerant Organic Asian Ginger Riced Red Lentil Pilaf and added veggies and tofu to make it a one pot meal. Nice texture and decent ginger flavor.
Last night we had a belated family holiday party/gift exchange and it was a great excuse to order party food from Pho Vegan Asian Cuisine to keep it simple. I went a little nuts ordering a couple of large trays and lots of little a la cart items and appetizers because leftovers will not go to waste. The vegan fried “shrimp” was a huge hit with the family as was the mock orange chicken. It was a delicious and simple meal so we could focus on hanging out and watching the dogs play in the backyard. Only Miko got tired of the young, large dogs acting crazy and preferred his peaceful warm blanket inside. And it was unseasonably warmer and nice weather for eating in the backyard.
It was great hanging out with family and catching up safely and I am thankful for having tomorrow off, especially since I need to take my car in to deal with a screw Ron discovered is stuck in the tire and maybe brave Costco, we’ll see. Now that is my kind of takeout order right there! I really miss eating with others and getting to try more dishes that way. Sounds like such a lovely party all around.
