Getting into Fall Spirit

It’s really starting to feel like fall here and highs will be in the 70s next week! Miko is ready, we washed his massive stash of soft blankets for every bed in the house. And the weather is perfect for runs and long dog walks.

It was another crazy week at work, kind of a blur and spent much of it in the office working on projects. I bought some fun new ingredients to use this week and did not get to them by the time I got home, was just feeling too fried and stuck with simple dishes for dinner like potato curry saute with chickpeas and veggies, huge salads, and spicy Thai tofu takeout.

And delicious rice noodle takeout from Pho Vegan Asian Cuisine.

There was also a huge, loaded kale salad with roasted acorn squash and a set aside plate of plain steamed Brussels sprouts to share with Miko. And more simple tofu stir fry with tamari.

Tonight we got out for more exciting options for the Sacramento Vegan Chef Challenge from Pho Fresh where the weather was perfect for patio dining.

We started with the spicy Super Damn Hot Chick’nless Wings and Crispy Shrimp Rolls, then onto the Po’Boy Banh Mi Sandwich and Seafood Angel Hair Noodles for a crazy and delicious fusion dish.

It was all delicious and a great way to wrap up the weekend and combat the Sunday blues before another busy week. I hope you have a great week and this list helps!

    Oh autumn, I have such mixed feelings… I’m not ready to let go of summer, but the squashes and apples are definitely a welcome arrival. At least it’s still plenty hot out in Texas for a while. I’ll enjoy your cooler weather vicariously for a while longer. ;)

      Yes, mixed here too, but loving the fall colors and better weather for outdoor dining. :-)

    Everyone is into the fall/Halloween spirit here for sure. I can’t believe how many people put up Purple and Orange Halloween lights and decorate to the extreme. It’s becoming so popular, I’ll have to get on board next year!

      Yes, the Halloween decorations in our neighborhood are crazy this year, so many are really into it and love it.
