As you’ve probably heard, the entire west coast is burning. Thankfully we’re not directly affected by the fires, just lots of smoke and hazardous air quality making for another weekend sheltering inside. Tuesday was very eerie with ash raining down in the afternoon as I left work. I keep indoor pandemic masks and outdoor filtering masks for smoke and ash with me now – ah, 2020. It was daylight for the pics below, but seemed like night in the thick layer of smoke.
But we have a sweet cuddle buddy who has been getting extra attention to make up for the lack of outdoor walks. And a visit from my mom’s dog preferring our cool wood floors.
Eats have been interesting this week with comfort cravings. There has been cooling salads, watermelon, and simple stir fries. But Ron made a delicious vegan grilled cheese and spicy Thai takeout of course.
On a recent trip to Sprouts Farmers Market, Ron spotted Kite Hill filled pastas and bought one of each flavor. We started with trying the spinach ravioli and it is a winner! Perfect texture, hearty, savory, and creamy filling.
For Labor Day, we had my parents over for a small gathering and had Beyond Burgers with corn and baked beans. Miko was very happy to share with me. Then more salad.
Friday night we had a quiet pizza night at home with Pizza Oggi Beyond Meat Americana vegan pizza and a selection of hot sauces for topping.
Tonight we dug out a Gardein Holiday Roast from the freezer for dinner served with roasted veggies and potatoes maybe pretending it was a happier holiday dinner … why not? It was a fun meal. But the Sunday blues are stronger after another quiet weekend. I’m sad for everyone affected by the fires and the challenges faced during a pandemic. Trying to be excited about another week at work and keeping busy. I hope everyone is doing okay and hope for a better week ahead starting with this list.

This just reminds me how much I’m looking forward to the holidays thanks to that gorgeous roast! I wonder if I can figure out how to make something similar for just one or two… Thanksgiving is going to look very different with a pandemic going on…
