This week we got a couple of days of decent air quality and a break from the smokey views! It was so nice to get in an evening run!
The air quality is back in the unhealthy range again and smokey, but it was good to get a break and enjoy a little outdoor time for a few days.
I have been spending more time in the office lately with big projects, but enjoy working from home when I can to watch this sleeping cutie next to me all day.
Eats have been all over the place with odd stress cravings. There have been salads and veggie stir fries.
But also comforting pasta dishes and a delicious lunch at Pho Vegan Asian Cuisine.
Ron discovered a new vegan burger this week – Worthington X Burger. It’s very realistic looking and made a comforting meal paired with vegan pepperjack and onion rings.
It’s very much like a Beyond Burger and something he will get again.
We also treated ourselves to a decadent splurge topping a Pizza Oggi Vegan Beyond Meat Siciliana pizza with Miyoko’s Smoked Vegan Mozz for a fun Friday night dinner.
It was delicious and the smokey flavor on the vegan mozz is heavenly on pizza or even melted into pasta sauce.
Trying to make the most of the decent air quality before it got ugly again, we headed into Sacramento for lunch on the patio at Mendocino Farms.
They have a pretty great vegan menu, we got the tofu Banh Mi and Impossible Taco Salad, both awesome and great for a change of scenery.
And tonight I made a comforting dinner of Trader Joe’s organic red lentil pasta, organic marinara, Miyoko’s Smoked Vegan Mozz with kale and peas for a hearty one-pot meal. Whew, I am still full!
It was a long and tough week at work, with the smoke, etc. Hoping we get more breaks from the smoke and a better week ahead starting with the list.
Ahhh, Mendocino Farms is the BEST! I love their Impossible taco salad too. Definitely going to miss that… The curry pasta salad is still a staple since they’ve shared the recipe online. I still wish I had the convenience of just grabbing it ready-made, of course.
Yes, I can’t wait to go back and get the curry pasta salad next, yum!
Ugh, I can’t even imagine the smoke. Air quality just isn’t an issue here. Nice to spend dog time. Both my dogs are mad at me because they got spayed yesterday and are feeling miserable today. Strange that they aren’t blaming my husband and he’s getting all the love! All the food in this post looks amazing and making me think my bland food choices of late are poor decisions!
Yes, it has been a crazy year. Aw, your poor pups! Hope they’re feeling better!
