Ugh, we are melting here with a high of 110 degrees. The weather has been so strange this week, but triple digits every day for the next 10 days is a little depressing. It was already hot when I got up at 6:30 am this morning and had to get Miko out on a long walk before it became dangerously hot for him. It’s going to be a looooong week! Miko has been happy to stretch out next to my work-from-home station and take in the AC.

I got out for one evening run this week before it got too hot. And we’ve been enjoying our new backyard garden with squash, beans, and corn growing.

Saturday my mom and I got out for an early walk with the dogs on a new trail, Miko loved it, but we needed to head back early when it got hot faster than the forecast originally called for.
Eats have been pretty simple this week, work was busy and I put off going grocery shopping after our camping trip. Simple romaine salad, potato and soy curl saute, Tofurky sausage with green beans and vegan parm, and a lovely ramen noodle dish with Trader Joe’s vegan mandarin “chicken” with veggies Ron whipped up.

I found a new dressing to try in a monster salad – Almond Butter Termeric by Noble Made.

For only 15 calories per serving and no added oil, it’s delicious with a kicky and strong turmeric flavor and creamy texture.
Other eats include a simple tofu stir fry and massive kale salad with watermelon because it’s hot!

And Miko being a cutie snuggling in his blankets. The heat has him conflicted, he loves his blankets, but the heat seems to be getting to him too.
I also stumbled on a package of Impossible Burger at our local Trader Joe’s last week which Ron has been enjoying making burgers. Tonight he made a delicious red lentil pasta dish with it and vegan parm that came out great. I was happy to find it locally since enjoying it while eating out has been tough lately.

And I had a successful and fun deal hunting trip to Grocery Outlet braving to heat, found lots of protein pasta, new dressings to try, instant noodle dishes, and sweet potato chips.

But it’s back to work tomorrow, this weekend flew by too quick! I hope it’s cooler for you and you have a great week. And this list helps be a positive start.

Talk about wild weather… It hasn’t been quite that hot in Oakland, but it’s definitely been a struggle to turn on the oven lately, especially without AC!
I have to admit, I didn’t love that dressing… But it’s a great idea from a flavor/nutritional standpoint, so I still want to experiment with some sort of homemade version. I do always have almond butter on hand, after all.
I’m so excited to hear about what’s growing in your garden. We have been eating so many tomatoes and basil here. I can’t even imagine what 110 feels like though!
