Garden Progress for the List

We’re still focusing on our garden during these crazy times and made a little progress this week around busy work schedules and triple digit heat. The starter plants are outgrowing the AeroGarden seed starter tray, so hubby finished up the drip sprinkler system on one of the garden beds to start relocating plants to – we have corn, cucumbers, and pumpkins officially planted in our new beds. And we turned an un-used beautiful pot into a fun succulent garden to go with all the new rock ground covering. We also added fun solar lighting around the garden beds and under our plum tree.

Miko has been such a sweet buddy, following us around the house, cuddling, and loving his long walks and sleeping in the air conditioning.

I got in 3 outdoor runs this week around the heat and trying to make the most of taking in the sights and nature.

Still trying to be as healthy as possible during these times and getting in lots of salads, tempeh stir fries. But there was delicious spicy sweet and sour Thai tofu takeout too to celebrate Friday and surviving the work week.

And a Tiger Mountain Mushroom Burger takeout for Zest Kitchen for lunch during a day in the office.

More stir fries, salads, and lots of chilled watermelon since it’s the perfect side dish on a hot summer day.

Tonight’s dinner was pretty awesome. I got a gorgeous eggplant in our farm box reminding myself that it’s been ages since I bought eggplant. I diced it up, simmered it with a dash of olive oil and red wine.

Then added fresh minced garlic, Trader Joe’s Organic Spaghetti Sauce, and Vialife Vegan Parm and simmered while I cooked Trader Joe’s Organic Red Lentil pasta. Mixed them all together for a delicious summer pasta dinner that worked well. And I have plenty of leftovers for easy lunches for hubby and I.

I hope you’re doing okay and making the most of these times. I think a lot about just getting in the car and going for a social distancing road trip, but have not yet and wondering when I will feel like it will be safe enough to do that. So still trying to make the most of time at home, Palm Springs on Hulu is a cute and fun watch. Digging Unsolved Mysteries on Netflix. The Wrong Missy is also a good watch on Netflix. And I hope you have a good week and this list helps.

    Just another week, much like the last… It does start to feel like Groundhog Day everyday. At least it was a bit cooler this weekend here. And it’s the little projects, like gardening and cooking, that help the time pass in a more productive, satisfying way. Glad to see you’re still at it.

    And those links do help! I’ve been trying tons of different protein powders lately and this list has a few I hadn’t heard of yet. There’s really no end to that category…

      So true, trying to keep busy with lots of projects here. There is such a range in protein powders to whole food based ones with a flavor tough to work with to overly flavored ones. And so many more options now.

    My husband and I would love to take a road trip to Colorado, but Alex just had a baby so we don’t have a dog sitter. Next year….

      Congrats to Alex and I bet you are keeping busy! Dog sitting is a challenge, I want to take more adventures with ours, but that’s a challenge too. Hope you’re staying well!
