More Sheltering for the List

And it’s getting old, right? The blahs are getting real this week with more of the same. There are still lots of outdoor runs and Miko snuggling.

And I had to take a break during this morning’s run to let angry geese clear the path. Don’t mess with angry geese!

But we’ve been doing more yard work this weekend while sweet Miko soaked up the warm sun on the patio.

There was also more takeout from Pho Vegan Asian Cuisine, more salads, and more stir fries.

And we tried Oggi Foods Plant Based Americana pizza with Beyond Meat and a gluten free cauliflower crust.

It was delicious! The crust had a cauliflower smell, but perfect crunchy texture and it was hearty and satisfying. The vegan cheese on it barely melted, but that was not a big deal.

I also had more tofu stir fries and made a delicious frozen banana soft serve ice cream with peanut power and rough blended a chunk of vegan chocolate into it – yum.

And we had a small, social distancing lunch gathering today for Mother’s Day with salad, fruit, and a fun new Zesty Black Bean Cashew Sauce chip dip to try from Beyond Better. Simple to prepare and fun with corn chips.

Hard to believe it’s been over 8 weeks now of sheltering in place, really feel like it’s hard to remember what a normal life was like before. But there are rumblings that things will slowly be opening up here and people will be migrating back to the office soon at my job. Which sounds good, but are we ready? Hard to feel that way with so much in the news saying we’re not and it seems like the number of new cases are still pretty steady.

It’s uncertain times for sure and I’ve been battling a bit of the blahs just as everyone else has. This short list is evidence of that, not finding a lot of inspiration this week. But there are some great recipes to have a little fun in the kitchen with. And I hope everyone is staying safe and healthy.

    How interesting! I hadn’t heard of this pizza before. I’m definitely a fan of Beyond, although I never really got into meaty pizza toppings before… Bummer about the cheese, but that’s still about par for the course, unfortunately. I’d still try it, for sure.

      Yes and it’s delicious, worth trying. We found another flavor of it to try this week.
