It was a crazy week last week, so busy at work I just wanted to sit and do nothing when I got home I was feeling so drained. Still adjusting to management and there is a lot of transition on our team now with a growing workload. I really love the new challenges, but they can also be stressful. It was very nice to get out for a run this morning even though it was slow and cold, just decompressing and listening to a podcast. And the weather was beautiful.
There has not been anything else exciting this week unfortunately with hubby and I so busy at work, we didn’t even get out to eat because we opted to relax at home Friday. Oh well, saves money!
Sweet Miko has been loving warm blankets and lap time in the chilly weather and being such a sweet heart as always.
Leela is hanging in there, but challenges grow as she gets older. She has a large indoor playpen with a bed and potty pads she sleeps in at night and we had to start putting her in more when we’re not home because she wanders the house and gets stuck in odd places if we do not. But she still loves to eat and sleep. .
My eats have not been exciting this week and I’ve been terrible about being adventurous in the kitchen or even snapping pics I’ve had so much on my mind. Lots of salads and tempeh stir fries.
Friday night hubby and I decided to relax at home and watch The Irishman on Netflix instead of going out and made Trader Joe’s Organic Quinoa and Brown Rice Pasta with marinara and steamed veggies for a simple dinner. Last night we had a fun family dinner at my Dad’s house where we played Clue, watched football, and made a huge taco bar with plenty of vegan options. I made a huge taco salad with Beyond Meat crumbles and vegan cheddar shreds. On a side note, the seasoned Beyond Meat crumbles hubby made were a bigger hit then the real beef my dad made, there were no leftovers.
Today it was a ginger loaded smoothie for breakfast, leftover salad with plenty of nooch for lunch, and a ginger loaded tofu veggie stir fry for dinner when we got home from seeing Star Wars which was better than I thought it would be.
Now I’m finishing laundry and mentally preparing myself for the next week at work. Having this list of positive news helps and I hope you have a great week!

That’s some good looking cooking! I don’t know, I’d be pretty excited to eat all that myself. Especially after so much holiday excess, these sort of staples are just my speed right now.
