Crazy that Christmas is a couple of days away! Ready? I think I am. Shopping is mostly done, food is mostly planned, and I am looking forward to a few days off work. This has been a busy week with work and holiday parties, but eats at home have not been that crazy with a hearty lentil stew that hit the spot on a cold and rainy night. And a simple tofu tamari stir fry with cauliflower and veggies.
Curry sweet potato saute with chickpeas and leftover corn and black bean salad from our company potluck.
Hubby tried something new we found at Target – Gardein Chick’n Florentino Skillet Meal.
Cooking it in a wok was pretty simple and he gave it a thumbs up for the hearty vegan chick’n, creamy sauce, and pasta with veggies. There are two servings per bag and they’re lower calorie than I would have thought being only 330 each.
We had our department potluck holiday party at work with a cookie contest and someone sweetly brought vegan cookies that were delicious.
I brought a vegan black bean and corn salad that served as a decent main dish with a chickpea kale salad someone else brought, tortilla chips, and fruit. And I scored a new blanket for the pups and Fireball Cinnamon Whisky in the gift exchange which will probably be, uh, interesting.
Last night we just relaxed at home after such a crazy week where Miko took in the fireplace and we stepped out for local vegan tofu Thai dishes.
And today went to a cookie making party at my sister’s house where we drank wine and chatted while kids made cookies and then gave us glitter manicures.
Now I’m wiped after hours of fun and ready to crash to get back to work tomorrow, but very excited for this week and spending time with family. And this week’s list as we wrap up 2019.

Ah, so much holiday fun! I’m truly envious. I wish I worked in a regular job that had parties at times like this. Glad you’re enjoying and making the most of it!

Sounds like you had a fun Christmas Christine! It was nice of a co-worker to bring in vegan cookies to your work party. Potlucks are always a little scary for me! LOL
