I could use a little more weekend before going back to work, this has been a crazy week month. I have been volunteering for the Sacramento Vegan Chef Challenge doing social media, running the fundraising month for our department at work, and adapting to my new job. It’s been a lot in a good way, but a lot. Not for Miko, he has been happy to be a lap cuddle buddy with hubby.

And I’m making new friends leaving work later now, we have a group of turkeys that wander the grounds and walk along the paths with people leaving the building.
I have been terrible with snapping pics or even getting creative with eats at home this week. More stir fries and salads.

But we did make it to Pho Vegan Asian Cuisine for lunch one day, the mock orange chicken and mock Mongolian beef were delicious.

Friday night we met a friend at Pho Fresh to try their Vegan Chef Challenge menu which was large especially considering they already have such a large vegan menu. I got the Just Facon Fried Rice using Just Egg, delicious, and hubby got the Jack-Up Banh Mi which was satisfyingly spicy.

We also got the vegan Crispy Chicken Boo and the oil-free version of the Ying Yang Caramelized Clay Pot dish.

They can create an oil free version of a lot of the vegan menu items which is awesome. And we finished with the Cinnamon Apple Wonton dessert which was perfect for fall.
Last night we went to a friends vegan Halloween party where I had a hell of a time figuring out a costume, I’m so bad with costumes. I got a video game themed costume for a work Halloween party because that’s our department theme, but I did not want wear it to this party and decided last minute to go as Liz Lemon from 30 Rock.

The food and decor at the party was amazing, they are really into Halloween with the whole house tricked out and so much great vegan food including pizza from two different places. Check out the vegan cheese spider cracker dip, so creative! And stone skulls in the fireplace, love it!

The hallways were had red light bulbs and spider webs everywhere and there were some really great costumes.
Today I met my mom and sisters for a paint and sip party and would you believe it’s the first time I’ve done one of these parties? I was not sure what to expect, but it was a lot of fun.

Basically there was an instructor walking us through mixing colors, how to place items in the composition, and technique which seemed to work really well. Mine actually came out okay.
It’s been a busy and fun weekend! Let’s keep that going with a great list to head into the week with!

I could use a little more weekend, or weekday…. Or night, too! I would do anything to stretch this month a bit longer. I’ve completely run out of time to visit Sacramento, and so bummed to just watch from the wings as this amazing event unfolds yet again. I really hope that some of the vegan additions will stick and become regular staples at these restaurants, though. I will definitely be out there, sooner or later, to check out the scene.
Yes, agreed, just need more time and money this month, lol. That is a bummer, hopefully you can make it next year.
Oh my goodness, I can’t believe you have wild turkeys roaming! We have them here too. My dog loves nothing better than to harass them. Until they turn the tables on him and show him who is boss! He’s such a wimp.
Haha, yes, they can be pretty aggressive when they want to be!
