Happy Wednesday. Thankfully the weekend is getting closer. I am wiped after many busy days at work, lots of drama that has been draining and I’ll leave it at that. No drama for the pups here, Miko is ready to cuddle and snack on watermelon with us while all Leela wants to do is sleep and eat in her old age.
And enjoy the air conditioning since we’re back to triple digit heat this week. I don’t blame her!
When it gets crazy hot, cool salads hit the spot and this simple and fun creamy curry dressing will add a comforting warmth to a cool summer meal.
Creamy Curry Dressing
- 1 tbsp. curry powder
- juice of 1 lemon
- 1 carrot, rough chopped
- 2 tbsp. tahini
- 2 tbsp nutritional yeast
- ¼ cup water, as needed
- 1 tbsp. miso paste
- pepper to taste
Place all ingredients into a blender and blend to a creamy texture. Serve and enjoy. Makes 4 servings.
It’s creamy, has a slightly sweet curry flavor, and perfect for coating cool greens and chickpeas for a meal salad.
