Summer has arrived here this weekend with temps in the 80s and 90s and Miko has been a happy camper with long walks and snuggle, lazy time after.
For Memorial Day, we stopped at Zest Kitchen for lunch were it was packed! Love seeing such a demand for healthy vegan cuisine. I got the loaded vegan nachos which were a delicious splurge.
Then we went plant shopping for hot peppers and tomatoes to add to the patio which sweet hubby promptly planted.
For Memorial Day dinner, hubby had a Beyond Meat sausage and I experimented with a fast and simple carrot dog recipe topped with sauerkraut and relish – yum! Oh course there had to be corn and watermelon.
Other great eats include simple and colorful tofu stir fries, salad, and steamed squash.
Summer is here, I have been sweating more at the gym after a treadmill run, could be related to getting older too! Of course there was a great lunch from Pho Vegan Asian Cuisine, I tried the fried rice this time and it was delicious because I have not had fried rice in ages.
I also made delicious apple cinnamon oatmeal in a wok for breakfast Saturday and we stepped out for spicy Thai tofu dishes.
There was also a deal hunting trip to Grocery Outlet where I grabbed more Orgain Plant Based Protein Powder for cheap and had to resist the delicious cookies and cream organic vegan ice cream bars!
Last night I made a big batch of tomato curry chickpea saute with sweet potatoes and corn for leftovers for the week and a huge batch of seasoned quinoa with sauteed summer squash, so I will be set with easy lunches this week!
And I had my sweet lap buddy this weekend while I worked on some projects, he’s such a sweetheart! Boo on the weekend being over, but I am looking forward to a productive week at work and finally getting out backyard fence repaired this week. Finding a contractor and working that out with our neighbors was a project that I’m looking forward to being done with. But first the list and it’s a good one to head into the week with.

I never order nachos because they’re always sparsely topped, or soggy, or just plain boring. Those would not disappoint, though!
I actually happened to find a vegan Lean Cuisine frozen entree at Grocery Outlet the other day. It was pasta, kinda blah, but I’m just excited that more mainstream brands are taking notice and providing some options for everyone out there.

So true and sometimes vegan nachos can be unimpressive. Nice, I haven’t seen a vegan Lean Cuisine yet – that’s very cool!

Your plants are so cute Christine! Good for hubby helping plant. Gardening is always a team effort I think! Jealous of your warm temps. It’s freezing here. Yuck. This year, I really stepped up my herbs!!!!

Ok, 100 is too hot for me! I’ve never, never in my whole life experienced a temp higher than 90 degree, so my imagination doesn’t stretch that far!
