Citrus Ginger Dressing

Happy New Year! Going back to work today was tough, but also nice after a few lazy days to get back into the routine. The pups are still very satisfied with their fireplace routine during the cold mornings and evenings.

New Year’s Eve was pretty laid back for us, hubby made a great dinner using the Field Roast Hazelnut Cranberry Roast for a last holiday celebration meal with roasted veggies and gravy.

And I got out for a slow run yesterday in the strong and chilly wind that started off good, but went downhill when I turned against the wind. Ha, that’s winter running!

Last night I made a simple soybean spaghetti soup with veggies served with leftover sparkling wine.

And hubby had a sweet surprise waiting for me when I got home from work today.

Such a sweetheart! And I was ready to hit the ground running today after a few relaxing days getting our donation stuff picked up to free up space in the garage, got my old laptop shipped out to sell, and driven to further get control of things for 2019. Having a productive day at work was great too. I’m also ready increase healthy eating while saving money this year and this simple salad dressing will help with that turning a boring meal salad into something exciting.

It’s got a simple list of ingredients that pack a huge flavor kick without oil or sugar and uses miso paste in place of salt.

Citrus Ginger Dressing

  • 1″ chunk of fresh ginger
  • 1 small avocado, seeded and scooped
  • Juice of 1 lemon
  • 2 tbsp. miso paste
  • 1 orange, peeled
  • 1 tbsp. maple syrup
  • dash of cayenne

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.

It’s thick and creamy, perfect for a hearty salad. I threw cabbage, apple, carrots, and kidney beans in this salad for a meal salad.

The dressing has a rich and tangy citrus flavor that lights up the ginger with a playful sweetness. It’s also savory with a little heat.

And a great way to inspire health goals for the new year.

    Awww, the flowers your hubby left you! How nice of him!!! And yes, so hard to get back into the routine after everyone being home for a week and a half! Ginger and citrus are 2 of my fav’s, can’t wait to try this dressing. And wishing you the happiest of New Year’s Christine!!!!!!
