It’s been an interesting week so I really treated myself with this salad with olives, hearts of palm, chickpeas, and corn. And such a blend calls for a kicky Mediterranean dressing that isn’t loaded with oil, cream, or yogurt. This one has a touch of tahini with garlic, herbs, and Dijon for a wild flavor combo perfect for combating the midweek blahs.
Better Mediterranean Dressing
- 2 tbsp. tahini
- 1 clove of garlic
- 1 tbsp. Dijon mustard
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1 tsp. onion powder
- 2 tbsp. nutritional yeast
- 1 tbsp. apple cider vinegar
- ¼ cup water or veggie broth, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 2-4 servings.
The texture can be a little loose, but still perfect for coating with powerful flavor that’s not greasy.
It has plenty of tangy zing pairing perfectly with a colorful salad.

~ I really like how this dressing isn’t loaded in oil, my mom is always insisting I don’t consume enough oils in my diet! I think the opposite. But she’s had a series on mini strokes….makes you think! So I’m avoiding oil and she consumes it like no tomorrow!
