Better Mediterranean Dressing

Aw Wednesday, Friday would be better and sweet Miko agrees because he has been ready to play every evening.

It’s been an interesting week so I really treated myself with this salad with olives, hearts of palm, chickpeas, and corn. And such a blend calls for a kicky Mediterranean dressing that isn’t loaded with oil, cream, or yogurt. This one has a touch of tahini with garlic, herbs, and Dijon for a wild flavor combo perfect for combating the midweek blahs.

Better Mediterranean Dressing

  • 2 tbsp. tahini
  • 1 clove of garlic
  • 1 tbsp. Dijon mustard
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1 tsp. onion powder
  • 2 tbsp. nutritional yeast
  • 1 tbsp. apple cider vinegar
  • ¼ cup water or veggie broth, as needed
  • salt and pepper to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 2-4 servings.

The texture can be a little loose, but still perfect for coating with powerful flavor that’s not greasy.

It has plenty of tangy zing pairing perfectly with a colorful salad.

    That dressing looks amazing! And I’ve learned in the past few years that I can eat my weight in hearts of palm :)

    ~ I really like how this dressing isn’t loaded in oil, my mom is always insisting I don’t consume enough oils in my diet! I think the opposite. But she’s had a series on mini strokes….makes you think! So I’m avoiding oil and she consumes it like no tomorrow!

      Yikes and same for my dad, insists olive oil is healthy and uses lots of it!

    This title works two ways, because it’s undoubtedly far better than anything else on the market, and what dish doesn’t Mediterranean dressing make better? ;)
