Hello, I hope you’re having a good weekend. I’m a little sad it’s almost over and it was another hot and smokey one from wildfires here. We’ve been spending a lot of time indoors still avoiding the terrible air quality which Miko is a little bummed about, but always happy to cuddle.
We did get a clearer sunset last night when a breeze and cooler temps moved in.
And it was clear enough this morning for a 6-mile run, but the smokey haze moved back into the valley this afternoon and it’s icky looking again. I think we need a little weekend getaway from this heat and smoke, but it needs to be somewhere where we can take the dogs since dog sitting is an issue currently and that’s challenging with Leela, so we’re trying to get through this.
I’ve been keeping meals colorful with marinara veggie sautes, meal salad with carrot, miso, ginger dressing, and stepped out to a great local Thai place for spicy tofu and veggies with a peanut sauce that was delicious.
We also made a trip to Nectar Cafe in Auburn for a fun lunch of the Southwestern Wrap for me and Tempeh Ruben for hubby.
Have I mentioned that I love having a Sprouts Farmers Market near my house lately? I stopped by yesterday and loaded up with buy-one-get-one-free Tofurky sausage and 20% off frozen foods. One of the impulse purchases was the Daiya Cheeze Lover’s Pizza which we tried tonight with a large pattypan squash (AKA flying saucer squash) I scored from a co-worker’s garden.
The squash is a lot like a summer yellow squash with a slightly thicker and heartier texture. I just chopped it up and sauteed with tamari and Trader Joe’s Chili Lime seasoning to keep it simple. The pizza was good, not super cheesy, but still delicious and good for a total comfort food treat. Okay, to the list!
And tips for having a non-vegan partner.
If only we could get a commercial like this in the US.
I like to think this is a good sign.

I wish the Sprouts nearby me was easier to access by public transit! It’s not really that far, but quite a walk, which is difficult to manage on the return trip with arms full of groceries. Seems like there are some great gems to find there. I’ll have to remember that pizza for the next journey, since I haven’t seen that variety before.

Yes, that would be a challenge! I wish more stores were walking distance here, Sprouts is about running distance for me – maybe I need a running shopping cart. :-) That pizza was good, would get again.

I love your flyer saucer squash from the neighbors garden! Yum. It’s hard to believe the fires you have where you live with the pouring rain here!

Agreed and so sad, and the news here states it’s our new reality with hotter, dryer weather thanks to climate change. Ugh!
