I am not ready for the weekend to end, boo. It’s been a great weekend, but also a little crazy and busy and me dealing with an icky cold. We’ve been trying to replace a position in our IT group for months, but no luck. We finally got a solid temp in this week and the poor guy was sick with a nasty cold. I worked with him the first day training and he was out sick the next two days. I came down with it Friday as well as two others in our team, ugh. Can’t blame him for not wanting to call in sick on his first day, instead we got the worst of both worlds making others in our team sick and still having to call in sick. Eh, it happens and made a 10k race interesting this weekend, hopefully we’ll all be healthier this week!
Been trying to keep things healthy and whole foods plant based this week with a simple tofu and brussels sprouts oil free stir fry and melon for dessert with hubby.
Miko has been ready to party this weekend bringing us lots of toys and loving the warmer weather.
Friday night we stepped out to Zest Kitchen for a vibrant dinner of quinoa wrap with avocado for me and veggie tacos for hubby. We split the banana crunch cashew cake for dessert and it was fabulous!
And a great pre-race dinner because we got up early Saturday for the Lincoln PACE Race in Sun City Lincoln Hills, a fun local race promoting exercise for all ages.
Hubby did the 5k and I did the 10k even through I was feeling stuffy with a headache from the cold. Things were going okay until about 2.5 miles in when my energy and ability to breath crashed, I was so stuffy I felt like I was gasping for air and my head was pounding. The next few miles felt very long with many walking intervals and it was not a PR, but I still finished and added a cool, heavy pottery medal from Gladding McBean for fun, local flare. And the hilly course through the Tahoe Foothills was gorgeous – I need to do more running in the area. I was bummed I didn’t get a better time, but it was not happening with the cold and crap happens sometimes.
After getting home and resting for a bit, we stepped out for a family birthday gathering for my sister and niece with a massive taco and burrito bar for Cinco De Mayo which is so fun and easy to include options for every diet. I layered up a massive burrito with beans, veggies, Daiya cheddar shreds, and hot sauce and just yum!
Today it was nice to catch up on house projects, shop for the week, and hopefully getting completely over this cold!

Way to push through on the 10k even with a cold! Bad runs happen so you just need to roll with the bad ones to really enjoy the best runs.

Mmm, that cashew cake… Is it like a cheesecake sort of texture? It looks fabulous!

Wow, I’m way too wimpy to run with a cold, I’m lucky to run when I’m feeling chipper. Taking my dog to get his teeth cleaned this morning at the vet, never ceases to amaze me that it’s 1000 to clean a dogs teeth!

Haha, I think part of it was wanting the cool medal. :-) Wow on the teeth cleaning bill! Big dog? It’s about $300 for ours.
