Happy Mother’s Day to all the mother’s out there. We’re planning a casual dinner here for my mom, so I’ve got a list of projects to address before like cleaning up the patio after Friday’s crazy wind storm and having hubby pressure wash it again since Leela prefers peeing on the patio instead of the grass lately. Miko has really been enjoying the warm patio and sunshine.
I’m enjoying the warmer, sunnier mornings and got in an easy 6.2 mile run before breakfast this morning.
Simple eats this week included a tofu BBQ veggie stir fry and huge, messy salad with hummus dressing and nutritional yeast.
And we stepped out Friday night for spicy, Thai tofu dishes.
Of course there was a deal hunting trip to Grocery Outlet when I scored big with Gardein Roasts, GoVeggie Vegan Cheese, Vega protein yogurt, veggie broth, and organic beans.
The GoVeggie cheese slices are only 35 calories each, have a spicy pepper jack kick, and melted nicely into a chickpea veggie scramble I made for breakfast this morning.
We also scored at Whole Foods. Hubby has been wanting to try Beyond Meat’s Beyond Plant-Based Sausage since hearing about them, but we haven’t had much luck finding them locally. Yesterday Whole Foods had plenty in stock in multiple flavors!
Not cheap, but worth it for an occasional treat. We tried cooking the Sweet Italian flavor in the air fryer and I served it simply with chile lime-sauteed summer squash, and corn with relish, mustard, and sauerkraut for dipping.
The texture and look is so realistic it’s kind of creepy, but the flavor was an outrageous treat – savory, fatty enough, not earthy, and great blend of spices. We’ll be doing more grilling with them over the summer for sure!

I’ve heard so many things about the Beyond Meat burgers but didn’t realize they had sausages too! I feel like it’s something I should try since so many people (both vegetarians/vegans and meat eaters alike) say are good.

Haha, yes, Leela has decided she no longer needs to worry about finding grass in her old age. The seasoning is perfect for summer veggies!

I know, never heard of it either! It’s great with a thick, rich texture. Been adding them to smoothies and yum! Nice protein and nutrients in them too.
