Another weekend flew by too fast. Maybe not for the pups, they were content to be lazy this weekend.
I got out for a run this morning, but it was kind of a crap show with strong winds and allergies flaring up again. At least I got in a few good miles before breaking down into walking intervals and got to visit with these cuties.
Bad runs can be frustrating when I just wanted to get some speed in and blow of some steam. But the winds have been really strong today with so much dust and pollen in the air.
Lately I’ve been scoring with the vegan dairy alternative finds at Grocery Outlet from drinkable vegan probiotic yogurt, great for smoothies, almond yogurt, organic blends, and my new favorite – Milkadamia Macadamia Milk.
The lightly sweetened original is great in coffee with just the right amount of sweetness, thicker and creamy texture, and great flavor.
It has not been a super creative week in the eats department, we went to Pho Vegan Asian Cuisine twice this week, had vegan pizza from Blaze Pizza Friday, and I’ve been creating simple sautes with batch cooked chickpeas.
I did get a little creative with Simply Legumes Organic Green Lentil Pasta last night serving the shells with marinara sauce, chopped and steamed cauliflower, and tomatoes for a hearty, but fun one-pot dinner.
I’m already looking forward to the leftovers for lunch this week! Not sure I’m looking forward to a busy work week ahead, the Sunday blues are a real thing for me lately. Especially since it’s my turn to be on call again this week, but I’m staying optimistic and hoping it will be a smooth week. How was your weekend?

Yes! I was just at Grocery Outlet yesterday and scored that same refrigerated Milkadamia too. What a find! I love the little containers and it was such a crazy bargain. Less than half the price for twice to amount. I’m almost thinking about going back and grabbing another one or two while they have it…
