Things have been a little crazy this week, I think I’m still behind from working the weekend and having a tough time with Leela not wanting to take her antibiotics. They’re larger pills that she is being so stubborn with even pill pocket treats aren’t working. However, chopping the pills up into 3 pieces and stuffing into IKEA veggie ball pieces is working for now. I can tell something is still up because she’s been spending a lot of time wandering the house restless like she’s not comfortable.
We may be visiting her regular vet this week once I get the the test results from the urgent care vet.
Miko is just fine, always ready for attention and to be my dinner lap buddy.
Even for this salad with a simple, summer dressing. It’s very hot this weekend, so simple and cool salads are perfect after a busy day. Especially with rich and creamy avocado based dressing using fresh herbs and I have a lot of fresh basil to use up.
Summer Avocado Dressing
- 1 cup fresh basil leaves
- 1 avocado, seeded and scooped
- 2 cloves of garlic
- 1 tbsp. miso paste
- 2 tbsp. nutritional yeast
- 1 tsp. Dijon mustard
- 2 tbsp. apple cider vinegar
- ½ cup water, as needed
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.
It has a very thick and rich texture which hit the spot for me coating kale and fresh cucumber.
With tangy and savory fresh basil and garlic flavors that are nicely strong and lively.
And perfect for surviving these triple digit heat days.
I have been very busy lately with work projects and not feeling very inspired in the kitchen, so I’ll be posting 2 days a week while things are a little crazy with my job and I work through stuff. But looking forward to things cooling off and settling down in the fall – I hope!

On a lighter note, I’m craving this dressing right now so hard that I would probably drink it by the glass if I could. It’s the epitome of summer. Time to get a huge bunch of basil to make it happen!

Thanks, the tests came back with a different type of infection so she’s on more medication for that now – poor girl.
