Whew, popping in with a quick summer recipe because it’s hot and I am wiped after a busy week so far. Sigh, and I’ll be working some on the weekend too, guess I’ll be thankful for the over time. Sweet Miko is always there to be a buddy at dinner time and ready in case I want to share.
He was bummed I didn’t share this recipe with him, but it packs garlic which is a no-no for dogs. It also uses this delicious Sabra Organic Non-GMO hummus I scored at Grocery Outlet.
The beauty of this recipe is you can use any hummus flavor you’d like, have fun. It takes hummus and turns it into a zingy summer treat with fresh dill, raw garlic, and flare.
Creamy Dill Hummus Dressing
- ½ cup hummus
- 1 clove of garlic
- 2 tbsp. Nutritional yeast
- 2 tbsp. Apple cider vinegar
- 1 tbsp. Fresh dill weed (or 1 tsp. dry)
- ¼ cup water as needed
- Salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.
It came out thick and creamy, but not too thick.
And worked for this hearty salad I added leftover chilled, roasted potatoes too.
Whip up this simple summer dressing when it’s too hot to do anything else!
