I have been a bad blogger this week, I failed to write a veggie burger post for national veggie burger day and didn’t even have a veggie burger! And I didn’t run or write about running on national running day! I know. My excuse is I’ve just been busy with work and I think veggie burgers and running should be celebrated all year. Every day is appropriate for snuggling according to Miko who is also embracing the hooded cuddle beds now.
Can’t blame him with the odd weather this week. June is typically hot in the Sacramento valley, but not this week – we’ve actually had more rain and highs only in the 70s. I almost wore running gloves this morning because it was in the 50s with a chilly wind – so strange. But back to normal next week with temps in the triple digits, so we’re enjoying this while we can with the house opened up and long dog walks.
I enjoy wearing different vegan tees and tanks to the gym I’ve collected over the years and this one has been getting positive comments lately.
I am a fan of stevia for coffee, but had to find something else when my usual Amazon shipment was cancelled for not being available. That ended up being a good thing because I discovered Now Better Stevia, a vegan friendly organic option considerably cheaper per ounce.
It’s slightly milder, but does not have a slight bitterness that some stevia powders can have.
Eats have been interesting this week like this messy and huge salad for lunch one day with olive hummus dressing.
I had a lot of tomatoes to use up at once and created a curry tomato stew with tempeh, sweet peppers, and spinach for an interesting looking, but delicious dinner.
Friday night hubby and I stepped out to our usual Thai place for vegan tofu, but I ordered something different – tofu with a sweet and spicy peanut sauce.
It was delicious and even better with hot sauce added! I am inspired to create a healthier version of it soon.
And there was a messy salad with carrot miso dressing, olives, sprouts, and pinto beans for a hearty and zesty blend.
And I did celebrate veggie burger day a few days late with a Gardenburger Chipotle Black Bean burger.
In my new bun obsession – a pretzel bun with steamed broccoli and Follow Your Heart’s Vegan Thousand Island dressing for dipping. I like these veggie burgers because they’re only 90 calories each with a nice texture and kicky flavor.
Nothing super new running-wise for me, I had a lovely, easy 4-mile run this morning and enjoying not training for races during the hotter summer months. It will mainly be shorter speed training sessions indoors and easy runs in the heat outdoors. I did order two new pairs of shoes that I will be trying and writing about soon – time to refresh after so many races.

Oh goodness, there are so many national food “holidays,” you would have to be pretty obsessive to celebrate them all. I think it’s admirable that you even knew about Veggie Burger Day in advance! It took me by surprise, I’m ashamed to say. At least it’s not something you really need a special day to enjoy. :)

I’m so on getting that Now Stevia! I am a total stevia addict and love it in my ice coffees. And I laughed at your burger bit, oh well, there’s always Sam’s Club, that’s where my my mom always says to get a good black bean burger! Ha. Making my own. Well, I try. I’m surprised about your weather….it’s 80’s here and humid. Bleh.

Me too and it’s good in smoothies. I need to try making my own veggie burger, I have yet to conquer that! Me too on the weather, but back to triple digit dry heat this weekend.
