Miko has decided he’s not a fan of alfalfa spouts, he was not eager to clean the floor when I dropped some making a huge salad.
So he shared carrots with us instead which I used in this fun and sweet curry dressing. I’ve made curry tahini dressings in the past, but this one is lighter and packs a sweeter kick with raisins and raw garlic. And has such a fun color.
Sweet Curry Dressing
- 2 tsp. curry powder
- ¼ cup raisins
- 2 tbsp. tahini
- 1 carrot, rough chopped
- 1 tbsp. apple cider vinegar
- 1 tbsp. miso paste
- 1 clove of garlic
- ¼ cup water, as needed
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.
It is very thick, perfect for coating a loaded salad with rich flavors.
It has a warming and playful curry kick that pairs nicely with the sweet flavors from raisins and carrot for a rich experience that’s not loaded with oil or sugar.
