Whew, the pups have the right idea this week.
They’ve been extra cuddly and sweet.
And I am gonna get in some more couch time myself shortly! I did the SacTown 10-mile race this morning as part of our 100-miles of races challenge this year and I am wiped! That race story will be coming soon, at least the weather was perfect – almost hot actually. This has been a tough week, I’ve been dealing with an off-and-on cold, maybe allergies, for the last week+ which has not made running, or working, easy. Seeing these sweet grazing sheep on last weekend’s long run did help.
It’s grazing season here where huge herds of sheep and goats are stationed around the area to eat most of the fresh grass and weeds before they dry up and become fire hazards for the summer. I like to invite a few to my backyard!
It was also a tough week because hubby was away on business travel. Usually having the house to myself is relaxing, but not really this week. It was very busy at work, I was dragging a bit feeling hot, achy, and tired with this cold-like thing, and just running late every evening getting everything done.
But it’s been a week of great eats. I met my mom for lunch at Pho Vegan Asian Cuisine one day where I got curry mock “chicken”.
It was very satisfying and comforting while I wasn’t feeling great.
When hubby got home Friday, we stepped out for spicy Thai tofu dishes.
And had a great dinner last night at The Porch to celebrate this week being over while we were in Sacramento picking up my race packet. They always have a decent amount of vegan options on the menu that are frequently rotated. We started with the fried green tomatoes topped with tofu “feta”.
Then the deep fried peanut and grit cakes over asparagus with sweet and sour sauce.
Sweet potato fries with their vegan comeback sauce – highly addicting.
And the vegan salad which was actually a huge meal salad with walnuts, chickpeas, and berry vinaigrette.
For other eats this week, I got creative baking quinoa and lentil leftovers into an acorn squash.
Made a kicky curry tomato saute with kidney beans, peas, and plenty of ginger and garlic.
And this zesty marinara saute with chopped up veggie burger, artichoke hearts, cauliflower and celery.
And, of course, salad with black beans and hummus dressing.
Whew, I am wiped after the race and just getting over this week and being sick I think. Hopefully next week will be better! Until then – the list!
