Super Lemony Tahini Dressing

The rain is back and we’re trying to be thankful for it here, but poor Leela has the blues about being stuck inside.

Miko keeps his toy close so he’s always ready for an indoor play session.

And it is tough to wear him out!

Making this simple lemon tahini dressing will not wear you out. I decided I haven’t been enjoying enough lemons lately and ambitiously bought a bag from Costco. Now I need to use up lots which is fine with me with so many great dressing possibilities. This is a traditional tangy lemon tahini dressing with miso paste and Dijon mustard for a fun savory twist.

Super Lemony Tahini Dressing

  • 1 clove of garlic
  • 1 tsp. miso paste
  • Juice of one lemon
  • 1 tsp. Dijon mustard
  • ¼ cup tahini
  • ¼ cup water as needed

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.

The texture is perfect – creamy and rich for coating, but not too heavy.

I tossed in sauteed onions and yellow zucchini with kidney beans for a hearty meal salad.

The dressing worked perfectly with a nicely tangy lemon flavor that was not too tart or bitter.

Now I’ve got about 15 more lemons to use up!

    You have rain and we have sunshine, with single digit wind chills, so no play time outside for my fur babies either. Spring can’t come fast enough!

    I just bought a bag of Meyer lemons at Costco yesterday, I’m loving the fresh fragrance. Your salads look delicious.

      Yikes on the cold, my pups would have nothing to do with that either! Agreed on spring, I’m thankful for the rain, but…

      Haha, think I bought the same bag at Costco and need to start writing more dressing recipes!

    I love using lemon in my recipes. Sometimes if a recipe calls for lime juice, I use lemon because that’s what I have on hand. This looks great as usual Christine!

      Me too and sometimes I sub apple cider vinegar if I don’t have fresh lemons or limes. :-P Thanks on the recipe!
