Ginger Tahini Stir Fry Sauce

Rain, rain, and more rain sums up this week! That’s cool, we need it and I can’t complain when it rains all week and we get perfect weather for the weekend. But the poor pups are not happy at all! It’s not easy coaxing them outside with 40+ MPH wind gusts, Miko would rather sit in my lap and pout.

This simple dinner is nothing to pout about! I am a fan of tofu, I actually love the texture and that it’s such an easy food to work with for fast meals. Also that a big pack of House Foods Non-GMO Organic Tofu is so cheap from Costco.

Oh, and that it’s a perfectly healthy food for women to consume. Tofu is my go to for veggie loaded stir fries a lot for a simple and fast dinner after a long day. Like salads, a simple tofu stir fry can have endless flavor possibilities through healthier blender sauces and you can use just about any fresh or frozen veggies you have on hand. This sauce is carrot-based with tahini, ginger, and garlic. It’s creamy, hearty, and comforting.

Ginger Tahini Stir Fry Sauce

  • 2 tbsp. tahini
  • 1” chunk fresh ginger
  • I clove garlic
  • 2 tbsp. miso paste
  • 2 tbsp. lemon juice
  • 1 carrot, chopped
  • 2 tbsp. nutritional yeast
  • ¼ cup water, as needed

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.

This was an interesting combination of tofu, small potatoes, and chopped zucchini which I highly recommend for a satisfying meal.

The creamy and tangy gingery garlic flavors really brought this combination to life making it delicious with vibrant color.

But still comforting and warming on a rainy night.

Add healthy comforting flare with this simple sauce.

    You get lots of rain where you live. Even though the snow can be steep at times, the sun peeks out most of the time. I love the idea of making my own stir fry sauce, the store-bought kind that I typically purchase is a budget buster. Thanks for sharing!

      We usually get a lot of sun too, but not this winter. It’s good, we need it. But it’s so muggy and gloomy this week. Agreed on the sauces and store bought can be packed with oil, sugar, and other bad ingredients.

    Ugh, I am so OVER all of this rain. I know we need it and it’s a good thing in general, but come on! Can’t we get a day of sun every now and then? Thank goodness the weekend forecast is looking more promising… In the meantime, I clearly need to console myself with this lovely stir fry. Surely I’d forget all about the ugly weather outside with a plate of this tasty mix in front of me.

      Me too! I know we should be thankful, but I miss the sun and tired of it being so muggy! Thankfully this weekend is supposed to be better here, woohoo! Thanks on the stir fry, it’s fun to throw together too.

      Boo on Costco not having tofu, I think you need to move to California! :-)

    I try to eat only fermented soy products, so I don’t eat tofu anymore.. luckily we have a GREAT source of locally fermended tempehs and saatans and such… yummmmmmmmmmy! <3 – http://www.domesticgeekgirl.com

      That’s good and I do incorporate a lot of tempeh too.

    I have some tofu to use in the coming days and I was going to make peanut sauce, but I like the sound of this. I always forget to use my tahini! Alas, I will fix this!

      Yes, tahini is perfect for sauces and so great blended with simple lemon juice and garlic too!

    Ginger is very good for digestion, it also make body warm when the weather get cold. But kids don’t like to eat them because of their taste. With this recipe, I think my kids will eat them with gusto. Thank you!
