Kicky Nacho Dressing

September 21, 2016 by christine

It is nice to feel almost human again, the last 36 hours have been rough with some stupid, annoying bug-thing running around at work. Ugh! Terrible headaches, body aches, no energy – it was pure evil that forced me to take a night off from training which runners hate. And many have been taking sick days because of it, so really busy at work too. I will say it has not seemed to hit me as hard as others at work, so I’m thankful for that. But poor Miko does not like being ignored when he wants to play.

Since we’re still getting summer weather here still, I figured a veggie-loaded meal salad with a feisty avocado dressing would be perfect to promote a speedy recovery. I never get tired of creating variations of creamy, vegan nacho sauces and dressings. They’re creamy, comforting, and kicky. But can also be based out of healthy ingredients like avocado, apple cider vinegar, and raw garlic.

Kicky Nacho Dressing

  • 1 avocado, seeded and scooped
  • 2 tbsp. apple cider vinegar
  • ½ tsp. chili powder
  • dash of cayenne
  • 3 tbsp. nutritional yeast
  • 1 small clove of garlic
  • ½ tsp. paprika
  • ½ cup water as needed
  • salt and pepper to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.

The thick and rich texture coats a large salad with flare nicely.

This hearty salad had black beans and crispy jalapenos for a lively dinner.

But the dressing can also make a great snacking dip.

It’s a fun way to give your immune system a boost!

Avocado heals all, so I’d say you’re right on track with this mix. Feel better soon!
