Easy One Pot Meals

Smokey had the right idea Sunday, snuggle up on the couch all day.

I was tempted after my long run and long week! But laundry and house work called and so did these World Peas BBQ Fava Crisps for an afternoon snack.

I wasn’t sure what to expect – can fava beans make a good snack? Yes they can, the texture is light and crunchy compared to cooked fava beans. And the BBQ flavor was slightly sweet with a nice savory and tangy flavor. The bag is kind of pricey and didn’t last lang, but would be a great travel snack.

I haven’t been getting too creative with recipes this week yet feeling wiped after long busy days at work and training runs, it’s been all about simple oil free stir fries and salads. I sauteed coconut milk, spicy curry paste, tofu, sweet potatoes, and cauliflower in this simple one pot meal ready in about 20 minutes.

And had a hearty salad and steamed artichoke for lunch with my mom one day.

This simple beauty used up a huge yellow zucchini from our garden sauteed with chopped tempeh and more cauliflower in Trader Joe’s Organic Mushroom Marinara sauce for a super fast and easy one pot meal.

But I think this salad might be the winner so far this week even though it has no greens. Chickpeas with chopped apple, rainbow carrot ribbons, cauliflower, and sauerkraut in a simple hummus dressing.

Tangy, flavorful, fresh, and probiotic. Miko loved sharing the chickpeas with me, he may even be a bigger fan of them.

And I’m gonna plunk down on the couch now after this evenings tricky training run!

    You’re still so good with eating healthy when being so busy! I am totally lazy when I’m stressed or busy .

      Thanks, but your eats are pretty awesome too! It’s tougher this week since I’m feeling more tired and emotional I think.

    I’m big on fava beans but I’ve never had them crunchy and munchable like this. Considering how successful chickpeas have made the leap into the snack category, I have no doubt that these would be delightful. I might need to try some experiments with my dehydrator to save a bit of money. Shouldn’t be too tough!

      Fava beans make a great crunchy snack here, I’m tempted to try making my own healthier baked beans too!

      Me too, perfect for a simple meal for one with simple lunch leftovers the next day which seems to be my routine lately. One pot protein ice cream meal sounds pretty awesome too and can be made a meal with a little protein powder and kale blended in. :-)

      It was me already being tired after a long work day and dealing with a possible cold/virus thing going around, I didn’t hit the pace I wanted and felt achy after.
