Awesome Burger & Simple Stir Fry

It’s nice to relax a bit after a couple of busy days at work, Miko has been enjoying downtime watching the Olympics in the evening with us.

I motivated myself to the gym after work today for a 30-minute tempo run and weight session.

It was good, but tiring since the heat was back today and more triple-digit heat days are back in the forecast for the next week. Boo.

Sunday hubby and I stepped out for and early anniversary celebration dinner at Garden to Grill. I love this place and need to get there more, so many great vegan options from healthy salads and quinoa bowls, to vegan comfort foods and decadent desserts. We started with the kombucha vodka cocktails in passion fruit and strawberry.

Wow! Kombucha makes damn good cocktails that I need to try making at home too!

And I seriously splurged for dinner – a rare treat after a long run. The western burger with onion rings, vegan cheese, hearty veggie patty, and tempeh bacon. With nacho cheese fries!

Yeah, it was an insane vegan splurge that hubby helped with and I had to try his avocado-loaded tempeh reuben.

They also have a lovely patio in the front and back with beautiful trees, such a great eating experience that I wish was closer to me!

I also worked with a fun Grocery Outlet score for a simple stir fry dinner – Westsoy Seitan.

I used it in a simple oil free stir fry with tamari and fresh summer squash.

With 21 grams of protein per serving, this makes a hearty and simple post-gym meal.

And there have been more salads too – always! This one is loaded with black beans and a kicky sriracha hummus dressing for a simple, cooling summer meal.

And if all goes well, I’m cramming in 5 running workouts this week. Yikes! Hope everyone is having a great week so far!

    Man, if I found seitan at Grocery Outlet, I’d buy out the whole supply! I’m so sad that the Berkeley store is finally closing in a week… There’s still the Oakland location, but of course, it’s farther away, which makes it very challenging when you don’t have a car. :(

    The kombucha cocktails look so good! If you come up with a winning recipe for that, I definitely want to know!
    Great job on so many running workouts! Sorry about the temps though – ours have also creeped back up. With the humidity, it’s a killer :(

    I agree on that burger and in particular those fries look amazing! I’d love to sample. And you know, I thought the Olympics would motivate me to the gym more but it’s been over 90 degrees here every day for week. I can’t tell you how odd that is for Buffalo where it’s usually around 75 in summer. I really hope you enjoyed your anniversary! Our 10th is tomorrow. I think I’m making something with blueberries and blackberries to celebrate, picked 10 pounds today. Any ideas?

      Thanks and they were! We need to make a trip back there soon! And it is tough working out in the heat, I had to do a little extra motivating to hit the gym more this week for marathon training! And hmmm, a cashew-based raw vegan cheese cake with pureed berries swirled in or maybe this:
