Cooling Salads

I have been a boring person this week bogged down with work and maybe a little cranky from the stress and heat. Thankfully this week is almost over and it won’t be so hot next week and hopefully quieter at work. The pups will love an opportunity to get outside more.

When we get triple digit heat for many days in a row like this, hot meals just aren’t appetizing. It has been all about large salads this week for lunch and dinner and I picked up a fun ingredient at Whole Foods to treat myself with – Sonoma Brinery Raw Sauerkraut.

I went traditional because it mixes easily with a variety of salad blends and dressings. It was delicious with carrot ginger dressing and chickpeas in a meal salad.

And surprisingly good with Hampton Creek’s Caesar Dressing in a hearty white bean salad.

Yeah, I’ve also been on a bean kick this week using a variety of them in salads and trying to replace more processed vegan proteins in my diet with them. That’s very easy to do now since they’re perfect for cool salads. A can of Whole Foods organic spicy black beans was delicious in this hearty salad.

I know, kind of boring this week with tons of salad. But hot weather is the perfect time to get in more fresh fruits and veggies. And happy Friday eve!

    I’ve been feeling the same way. I don’t get hungry when it’s so hot and humid. All of those salads look fabulous.

    The heat is totally making me cranky here too and I’m sure I don’t have it nearly as bad as you!!! So salads it is. It’s amazing how I can eat salads everyday and not get bored when it’s this hot. I have a huuuuuuuge appetite that disappears in the heat. But I’m toying with lots of vegan desserts and they are scrumptious. Heading to NYC all next week and looking forward to checking out some vegan restaurants, something we don’t have here!

      So true with the heat, I’m perfectly happy to live off salads, smoothies, watermelon, and frozen grapes! That is awesome about NYC, can’t wait to see where you go!

    Sometimes I wish we had a bit of that heat out here… But then I realize just how lucky we are in the bay area. The weather is pretty much perfect, aside from some foggy/chilling mornings. Besides, even cooler days wouldn’t stop me from enjoying big, refreshing salads like this one. Looks great!

    I tried the best thing today. I was really unmotivated to make anything too exciting, and wanted cheesy goodness. So I warmed up some black beans and melted in some toffutti cream cheese. Then I put it in the fridge to cool. It was SO GOOD! New favorite comfort food for sure!
