Healthy Hacks

I am a bit out of it today, I had a long dental appointment yesterday I’ve been putting off for awhile to finally get old work re-done and having an achy mouth and not being able to enjoy certain foods since has made me a little cranky. But that’s temporary and I’m thankful to finally get this over with and not need to face anything like this for a long time! I think that plus the triple-heat has been a little deflating this week, so it’s a good thing I’ve had leftovers to use up for simple meals. Like using leftover black beans and rice over greens and topped with fresh corn.

And leftover jicama salad from our Memorial Day gathering with vegan bacon bits and oil free balsamic dressing.

Before my dental appointment, I had to enjoy popcorn since it would be awhile before I could again! One of my favorite low calorie healthy hacks for air-popped popcorn is to spritz a blend of apple cider vinegar and tamari for a light “salt and vinegar” snack that’s oil free.

After the appointment I created a simple oil-free tofu stir fry seasoned to taste with more tamari, apple cider vinegar, and sriracha.

And had to share carrot and sweet pepper nibbles with my favorite lap buddy.

Aw, again I am so happy Friday is almost here and I hope it’s a great Friday for everyone!

    I’m so glad it’s Friday too! That is such a great idea to mix ACV and tamari to spray on popcorn! I would never have thought of that! And since it’s just a spritz I’m sure the popcorn doesn’t get all soggy.

    You healthy popcorn hack is so smart! I used to spritz mine with braggs amino acids and top it with nooch, but I never thought to switch things up and add vinegar to the mix. It sure wouldn’t hurt me to cut down on the sodium a bit. I’ll have to try that next time.

      Thanks and Bragg’s amino acids are good too, but the vinegar adds a delicious, light tangy flavor while not making it soggy.

    Yum your day of eats looks so good! That is a great idea for the popcorn! i always sprinkle mine with sea salt and black pepper but it doesn’t really stick because I don’t use oil.

      Thanks, I’ve tried sprinkle seasonings on popcorn too and you’re right, so tricky to get them to stick!
