Things are still crazy this week at work, so crazy that I have not been too inspired to be creative in the kitchen. They are settling down finally and tomorrow is Friday! So, yeah, it’s a random post. When hubby and I walked by Rogue Sriracha Hot Stout Beer shopping last weekend, I had to grab it! After checking Barnivore of course.
I’m typically not a stout fan, they can be a bit heavy and bitter. But this was not bad! Slightly sweet, rich, and a satisfying amount of heat without being over powering. Worth a try if you’re a sriracha fan!
I threw together an interesting rice dish by simmering brown rice with frozen spinach, black beans, carrots, and vegan bacon bits in a Mexican seasoned broth that came out very nice.
Leela did not agree because we were getting a thunder storm during dinner, so she violently shook in my lap.
I also made a huge dinner salad using Gena’s Carrot Miso dressing, one of my favorites!
And seasoned steamed edamame with a creole blend for a simple protein side dish to snack on with the salad making a fun dinner.
It’s been awhile since I’ve been to Trader Joe’s because our local location is insanely packed on the weekends. I finally made a trip back after work yesterday and loaded my cart with tons of new vegan goodies!
They have their own high protein black bean pasta now that I can’t wait to try! And simple frozen organic cauliflower “rice” for a healthy option on a busy night. And hubby loves having easy vegan soups in the pantry, so I was happy to see new organic options there too!
One thing I love about spring and summer is the sun coming up earlier and being sunny for the morning dog walks before work. The dogs love the opportunity to sniff everything and I snapped Miko while he was shaking it off.
He is not a fan of wearing a harness and frequently tries to shake it off. But I’m worried walking him with just a collar could be bad for his neck, I’ve read that’s not recommended for small dogs so he has to put up with it!
Finally I’ve been testing the running advice I got Sunday and started upping my weekday treadmill runs at the gym to tempo runs and running for 30 minutes instead of 3.1 miles as I usually do. I logged 3.62 miles in 30 minutes today with some speedy intervals. Somehow I can never take a good post run treadmill pic, my phone camera is always fogged up from being in a sweaty pocket!
And maybe I was a little wiped after the intensity! But it was good and I can see myself increasing the time and distance as I start serious marathon training.

Ahahhaa! Post-workout treadmill pictures, there is always something special about them :D Have you ever tried putting on some sort of shoes/socks on your dog? My in-laws did it just for fun, it’s HILARIOUS!

I loved all the nooch on your salad + all the bananas in your cart!! I kind of took a break from running this winter and biked instead. When I went out for a run last weekend, it was mostly uphill and I thought I was going to die It’s crazy how running just ups the cardio game for me. Good job on the extra distance!

Thanks, I go through both in bulk! :-) Running is a crazy good workout and can be so tough to get back into. But it helps makes so many other things easier in life!

I go through a lot of nutritional yeast, so great to blend in vegan “parm” topping. Thanks on the dinners and planning to try the Trader Joe’s pasta this weekend. I really like Explore Asian’s Black Bean pasta.

I’m not really fond of beer, but I do love sriracha, so I’ve been curious about that unconventional combination for a while now. I would definitely give it a sip, if only I could buy just a single bottle! More alluring though is the potential it has for cooking. I’d love to use it to braise some jackfruit, much like a spicy pulled pork.

I really liked the sriracha stout! I am a stout girl (er.. all beer type of girl lol) and I had low expectations since I’ve had some bad spicy beers before. This was pretty good, though I have a feeling they ditched the garlic part of sriracha in the drink.

I have a tempo run scheduled for today. I’m just waiting for it to warm up a bit before I head out.
Poor Leela, she’s just like my little Gizmo. I have to stop what I’m doing during a thunderstorm so he can sit on my lap and hide under a blanket. It’s the only way to calm him down. Coco could care less. Nothing scares her.
Great eats last week. I love cauliflower rice!

Nice on the tempo run and I wish I could do them in the mornings outdoors too, but that does not work with my work schedule.
Miko is the same way with thunder, does not even notice it!

Aw, thanks on my hair. It can also be a complete frizzy PITA! :-P I often wish mine was straighter and easier to deal with, we always want what we don’t have.
