I caved and gave Leela a blanket back for her bed and it’s not working out too well. Every time she leaves the bed, she drags her blanket away and sometimes to the other side of the house. Then pouts at me until I put it back on her bed so she can burrow into it.
She does this a couple of times a night, so we’re gonna try the cozy cave bed hood again!

And I want to enjoy a huge bunch of golden beets we got in our farm box. These beauties are a great source of fiber, potassium, and calcium. And good added to smoothies blended with frozen banana chunks.
But this medium beet made a fantastic raw vegan salad dressing blended with raw tahini, miso paste, and a playful amount of kicky raw garlic and lemon juice.
Golden Beet Tahini Dressing
- 1 medium golden beet, rough chopped
- ¼ cup raw tahini
- 2 cloves garlic
- 3 tbsp. lemon juice
- 2 tbsp. nutritional yeast
- 1 tbsp. miso paste
- ½ cup water, as needed
- Salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.
The bright color is festive and vibrant for spring, I coated a romaine salad with chopped carrots and kidney beans for a filling meal salad.
The flavor does not disappoint, it’s one of my stronger dressing recipes with a tangy garlic heat perfect for mellow romaine.

Thanks and golden beets are nice with a milder flavor and texture than red beets I think.
