Simple Eats Lately

Rain, rain, and more rain here lately. That’s a good thing, California needs it! But things tend to get a little cranky after many wet and gray days. We got a beautiful break in the rain Sunday morning, perfect for a 10-mile run.

A little windy and the clouds were starting to build for the next storm towards the end, but the the grazing sheep were happy to chillax in the grass.

That was my final long run before a half marathon this weekend and the forecast is showing plenty of rain for it. Yikes, that should be fun!

I made an interesting post-run lunch using up a package of Follow Your Heart’s VeganEgg and a package of Trader Joe’s Frozen Edamame Seaweed Rice for a savory, veggie loaded scramble.

It was very hearty and filling, the texture of the VeganEgg product works well for fast and simple scrambles.

By Sunday evening I was feeling wiped after the long run and running errands in the rain, so I kept it simple again with a marinara saute with Tofurky Sausage, kale, and carrots.

Delicious for less than 15 minutes to saute stove top.

Monday night I went out to dinner with my mom and sister to the Yard House where they have a nice Gardein menu to order from for vegetarian and vegan options.

I went with the rice bowl and was impressed with the vibrant, colorful display of veggies.

There was also this simple lunch salad topped with pumpkin seeds and pumpkin tortilla chips with mushroom dressing.

And this very simple oil free stir fry after a busy day at work and the gym with tempeh, carrots, kale, and purple cauliflower.

First time having purple cauliflower, it was an impulse buy at Trader Joe’s and it adds such a pretty and fun color to salads and stir fries. It didn’t taste different from white cauliflower, but adds a fun color pop.

    My favorite simple eats are PB&J, hummus with sweet potatoes or a bowl of beans and rice. You eats looks great for all your running. I bet you’ll crush your race this weekend! Good luck :-)

    I absolutely love the pic of the sheep! Makes me want to chill out with them.
    Eats look great – love Yardhouse for the good vegan options. I keep meaning to try the veganegg but just haven’t gotten around to it yet.

      Me too, they look so serene in the vibrant green grass. Yard House is a great go to for group eats, I also like their tofu mushroom lettuce wraps. VeganEgg is a lot of fun for simple recipes, the flavor and texture by itself is a little iffy, but perfect to mix in grains and veggies.

    Those sheep are so cute! I don’t get to see animals relaxing in the grass much where I live but when I do it’s one of my favorite things.

    I’ve been to a Yard House in Florida before and I love that they have Gardein options. It’s a good place to go with omnivores too if you’re going with a bunch of people.

      They are, I love spotting them around during grazing season here.

      Thanks on the race and I guess I’d better plan on buying a poncho if not!

    I just gotta say….that food does not look simple to me! All looks so good. And those sheep. How cute can they get? Seriously, cute faces. Good thing I’m not allowed sheep or goats where I live because things would get really crazy really fast!!

      Aw, thanks. :-) Tossing chopped veggies and some sort of vegan protein into a wok is my simple go to. Agreed on the sheep and they were social coming up to the fence to say hi as I ran by. It would for me to if I had room and time to rescue more animals!

      Thanks and the weather forecast is still windy and rainy, they had to update the course to avoid flooding. Yikes!

    I didn’t know Yard House had such a nice vegan friendly menu. I’ll keep that in mind when eating out with family. I haven’t found a full vegan place that is nice outside of on brewery chain, and I am getting sick of always getting their veggie burger. lol

      Agreed on the veggie burger, but Yard House will swap any of their burgers with a Gardein patty too. It’s one of my favorite places to go with non-vegan family and co-workers when I can’t talk them into a local all vegan place. :-)
