Happy Valentine’s Day! Got any fun plans today? We’re planning to hear a famous doctor talk then brave the chaos and go out to dinner – should be fun! And I’m planning a 10 mile training run before because it’s Sunday Run Day! Last weeks training run went much better than expected breaking in new Brooks Glycerin 13s.
And the weather was perfect, sunny but not too hot. Can’t complain about that!
Oh yeah, last Sunday was Superbowl Sunday too and we had more fun preparing tofu “wings” for dinner than actually watching the game. Hubby froze a package of extra firm tofu, then thawed it out to improve the texture. Sliced it into sticks, rolled in a little cornstarch, and fried in our deep fryer and coated with wing sauce.
They were delicious served with Follow Your Heart’s Vegan Bleu Cheese dressing, great texture and crunchy outer layer.
Other eats included this potato kale coconut curry stir fry using my two new favorite pantry staples – Maesri Prik Khing Curry Paste and Native Forest Organic Coconut Milk.
Salad with spicy peanut dressing and sprouts.
Layered leftover steamed broccoli and potato curry stir fry for lunch.
Simple oil free tamari tofu stir fry.
And kicky curry tofu stir fry with our dinner buddies.
I have a thing for adding chopped potato to stir fries lately, makes them heartier after hitting the gym.
This salad with my mom that included chopped raw beets and organic mushroom dressing.
And a crazy stir fry I threw together yesterday with Tofurky Vegan Sausage and Follow Your Heart’s VeganEgg.
Last night I whipped up a veggie quinoa dish in a wok with Creole seasoning and lately have been having fun cooking everything in a wok.
Rice, quinoa, pasta, and other grains cook fast over high heat in a wok and make it easy to add other ingredients for a simple one-pot meal.
Of course hubby and I headed to our favorite local Thai place for spicy dinner Friday night.
Never get tired of Thai, so many great vegan options with lots of veggies and kick!
And I headed to Grocery Outlet after the gym yesterday to score more deals on new vegan products to try.
Awesome deals on Nature’s Path Organic Vegan Granola this time! And Silk vegan yogurt and Nutchello which is awesome in coffee.
It’s been a great week of eats and I am loving this long weekend for fun and down time. Time for a fun training run, but first the list!

I’m dying to hear what you think of the Nutchello. It sounds amazing and it kills me that I haven’t found it in stores yet.

The Nutchello is delicious, like a malty, sweet caramel drink that’s great in coffee and would probably be awesome in blender banana soft serve.

Happy belated V-day! You make eating vegan food seem so easy. Still looking for a vegan restaurant to try, but only have met with restaurants that serve just one or two vegan dishes. Oh well. I guess I’ll just make a smoothie for lunch. Those caramel almonds + cashews look amazing, I’m keeping an eye out for those!!!

Great run! I’m still working up to running more than 3 miles on the treadmill since my back injury but I could’t do that time running that far – very impressive – I’ve never been much of a fast runner.
Interesting article about beet juice – maybe I’ll try it before going to the gym this week.
I need to find some of that Nutchello!
